Agave Verde is a name used for many different types of agave depending on the region where the term is used. In Oaxaca, it is mostly referring to a Karwinskii agave, which puts it in the same family as agave Madre-Cuishe, Cuishe, and Largo. It’s typically vegetal in flavor like many of the other Karwinskii agave. The agave Salmiana, however, from San Luis Potosi also commonly goes by the name agave Verde, but it is likely referring to a different species. In Jalisco where raicilla is produced, agave Verde can refer to agave Angustifolia which is the parent species of agave Espadin. The naming confusion regarding agave “Verde” may exist in other regions of Mexico as well.
