5 Sentidos Azul from Delfino Tobón Mejia was produced in San Pablo Ameyaltepec, Puebla with maguey Azul (Agave tequilana) that was cultivated in the Mixteca Poblana. If you have ever wondered what Tequilana Weber agave would taste like in the hands of an artisanal mezcalero, you are in luck. Remnants of a 1970’s government program, pockets of maguey Azul (sometimes simply referred to simply as “Agave”) can be found throughout mezcal-producing regions in Puebla, and maestro mezcalero / tomato farmer Delfino Tobón Mejía especially cherishes the agave for its high sugar content and delicate flavors. Tasting Azul made by Delfino in his homemade 3-plate copper still is a revelatory experience for tequila and mezcal drinks alike.

5 Sentidos

5 Sentidos (or Cinco Sentidos) is named after the five senses that their mezcaleros use to produce their agave spirits. The producers of this mezcal do not use any model machinery or tools, being guided only by their senses throughout the production process. The brand was launched by El Destilado restaurant in centro Oaxaca. The restaurant is known for it’s creative menu, unique cocktails, and exception agave spirits. The brand is a curated tour of Mexico with a wide range of expressions that are made by some of the best mezcaleros in the region. Cinco Sentidos is uncertified mezcal and is labeled as “Destilado de Agave”.

Batch: Azul-B02-19 ABV: 48.2%

Nose: Pineapple, tropical fruit, chalky, buttery candy, light glue and acetone, sour brine

Palate: Bitter passion fruit, mangoes, it’s bitter but fruity bitter like grapefruit, then slate and brine. Finish is Light peppers lime, saline, minerals

I agree with those that say this is crushable. Really easy to drink, big pops of fruit with some bitter minerality. Good stuff

Hot and clunky. No finesse to speak of. Cilantro and iron. Glad I didnt buy a whole bottle of this one.

A bit lactic in aromas and flavor, which I don’t typically love. The nose has additional notes of orange, creamsicle, and pineapple. The palate is light, not super complex, but interesting. There are some big fruit elements. This is enjoyable, but my least favorite of the new Mixteca releases.

Nose – Birch twigs. Celery leaf. Fresh lime.

Palate – Slick mouthfeel. Dry grass. Sage. White pepper. Lime zest. Charred hickory. Very nice!

Lot AZ01-19CA: 117 bottles
Nose : butter, citrus, onions with butterscotch. Celery that turns into fresh sea air.
Taste : clean, oily, mostly candied pineapple slowly changing something rather grassy
Finish : keeps you interested and wanting more…
