About this destilado de agave

5 Sentidos Coyote from Eduardo Cortez Perez was initially released as a California-only batch of maguey Coyote. This specific Coyote is thought to be a cross between Agave karwinskii and Agave Potatorum, which some other producers would refer to as a maguey Coyota. Eduardo is the son of “Tio Tello,” who is also bottled by Cinco Sentidos.

5 Sentidos

5 Sentidos (or Cinco Sentidos) is named after the five senses that their mezcaleros use to produce their agave spirits. The producers of this mezcal do not use any model machinery or tools, being guided only by their senses throughout the production process. The brand was launched by El Destilado restaurant in centro Oaxaca. The restaurant is known for it’s creative menu, unique cocktails, and exception agave spirits. The brand is a curated tour of Mexico with a wide range of expressions that are made by some of the best mezcaleros in the region. Cinco Sentidos is uncertified mezcal and is labeled as “Destilado de Agave”.

There are big sweet notes like crisp green apples, old fashioned donuts, and Cool Whip. Not much of a finish for me. Second time sipping this. IIRC someone compared it to brandy the first time we tried it. I think Tobala fans will enjoy this quite a bit but I’m not very drawn to it. October 2020 batch from bottle #33/54.

Nose – Invigorating! Marmalade. Sweet, wet soil. Suede. Delicious smoke.

Palate – Soft, coating mouth feel that dissipates quickly. Apple cobbler and ice cream. Cigar box. Extremely tame for near 47% ABV. Finish is nice and long – saddle leather and Skoal long cut classic- the cowboy way. 🙂

Another killer 5 sentidos jam!

Incredible. Pine, double bubble, papaya, cedar, peychauds bitters, and more. I just really really really enjoy this.

This one has a crazy light mouthfeel! It’s like it disappears as soon as it hits your mouth but leaves behind all the flavor. Someone in the tasting compared this effect to eating cotton candy and I think that nails it. Anyways the flavor is delicious!! Baked apple pie, allspice, clove, and pineapple jam. Unique and delicious.
