About this destilado de agave

Cinco Sentidos Espadin from Tio Pedro is made with agave Espadin that grew at approximately 5,100 feet above sea level in San Martin Tilcajere, Oaxaca. The first batch released was just 62 liters. Maestro mezcalero Tio Pedro Pascual Hernandez Arellanes cooked 18 agave Espadin hearts in an underground pit oven with huamuchil and encino wood for five days. The cooked agave were then mashed by hand and fermented in a single pine vat for 13 days. It was then double distilled in small clay pots at Tio Pedro’s palenque in Santa Catarina Minas in April 2018. Additional batches have been of similar small size.

5 Sentidos

5 Sentidos (or Cinco Sentidos) is named after the five senses that their mezcaleros use to produce their agave spirits. The producers of this mezcal do not use any model machinery or tools, being guided only by their senses throughout the production process. The brand was launched by El Destilado restaurant in centro Oaxaca. The restaurant is known for it’s creative menu, unique cocktails, and exception agave spirits. The brand is a curated tour of Mexico with a wide range of expressions that are made by some of the best mezcaleros in the region. Cinco Sentidos is uncertified mezcal and is labeled as “Destilado de Agave”.

i have had this botlle for about 2 years.the first sample didnt impress me that much.it sat on the shelf for about 18 months and i tried it again.totally different mezcal.i picked up on the red hots reference tyler had mentioned.nice veggie and sugar balance.pleasant smoke and nice bite.straight forward espadin and rustic.true agave flavor.a little treasure.

Tasted this at his home, surprisingly smoky. Complex palette, a little rustic but the agave remained the core to hold it together. Balance of fruit, earth, smoke, and some floral components. Some tea components came through which I think are expressed through the native yeasts.

Really nice clay-distilled agave Espadin mezcal from a mezcalero who worked at Mezcal Real Minero for many years. He now has his own palenque and produces small batches. There is a little bit of cheese here with dark cherries and tobacco. There is a flavor here like Hot Tamale candy which is really nice – not artificial or too sweet but rather a sugar and cinnamon. This is a pretty small batch and only available in California at the moment but look out for more batches in the future.
