About this destilado de agave

A rare chance to taste maguey “Espadillon,” this yet to be scientifically identified plant was one of the main agave varieties used for mezcal production in the Mixteca Alta before eventually being supplanted by government-introduced Espadín in the 1970s. Emmanuel Ramirez and his family are one of the few families in the region to still cultivate this variety that can take up to 14 years to reach maturity, and this expression is possibly the first Espadillon to be exported to the U.S. Intensely aromatic and slightly feral, this 140-liter batch demands to be sipped slowly.

5 Sentidos

5 Sentidos (or Cinco Sentidos) is named after the five senses that their mezcaleros use to produce their agave spirits. The producers of this mezcal do not use any model machinery or tools, being guided only by their senses throughout the production process. The brand was launched by El Destilado restaurant in centro Oaxaca. The restaurant is known for it’s creative menu, unique cocktails, and exception agave spirits. The brand is a curated tour of Mexico with a wide range of expressions that are made by some of the best mezcaleros in the region. Cinco Sentidos is uncertified mezcal and is labeled as “Destilado de Agave”.

Nose: Caramel, salty cheese, pineapple candy, black licorice and vanilla. Also kinda reminds me of some Bacanora; a little fatty and savory, a little earthy, like dusty deli meat but then that goes away and I get canned pear juice.

Palate: floral, cheesy, roasted agave, pine needles and oak, smoked fish. Medium finish, soft and round body. After everything else leaves, I’m left with tart green grapes, salt, root beer, and a numb palate. Once I finish the last sip and let my glass sit for a moment it leaves behind this wonderfully delicate smoke.

Super weird but also hard to pick apart. Almost 50% but really soft and inviting. This bottle’s a conundrum for me but I’m glad I snagged one. I’ll have to let it open up a bit and come back to it later.

Nose is very minerally and like a dirty vodka martini with green olive. Aromas of sweet cream show up as it opens up in the copita. Taste is earthy with not as much minerality with hints of firewood, rawhide, and dry grass. Medium bodied. I was tempted to say one-note but it’s not. The flavors are just subtle. 1.5 note. 3.5 stars

This is a hard nut to crack. Aromas of slightly tart orange, spearmint, molasses, burnt sugar, and burning sage. The palate has some heat and is a bit sticky in mouthfeel. It’s got a little funk, notes of canned peaches, fruit cocktail, and oak. The ABV on this makes it tough to really dive into. I’ll need to let this sit in the back of the closet for awhile. Batch pick for Alamo City Liquors in San Antonio. Lot ACL2022. 55% ABV. Bottle 58/66.

Nose – Vanilla. Orange citrus. Scallions. Baked, crispy parmesan cheese.

Palate – Creamy, slight funk but delicious. Canned pear fruity sweetness. Cocktail onion. Peppermint heat, oak ember and vanilla finish which lasts in a very long, very pleasant aftertaste.

1 oz. sample from Tahona Mercado. I could definitely down more of this! ABV: 49.54%

Sipping the same night as razorbackmike – nice! Definitely dig this one. Bold espadin vibes with some more vegetal flavors like an Alto from Michoacán. Very well distilled with ABV in control. Overall rustic nature like it’s from an ancient copper still. Solid pick for the 2nd Mixteca series. Tried at Destino in DC. Bottle 39/166.

just stunning!the nose makes me think karwinski.the palate has green notes of a karwinski with bold sweet espadin and an earthy tobala.i have had numerous ensembles but the flavors were so distinct and seperate.so silky with little bite.nice mellow long finish with gentle smoke.what a shame that this agave was almost erased by espadin.so unique and beautiful!
