About this destilado de agave

Agua del Sol Bicuishe from maestro mezcalero Macario Rios was produced in Miahuatlan, Oaxaca. The agaves are milled by horse drawn tahona, fermented with wild yeasts, and double distilled in copper alembic stills.

Agua del Sol

Agua del Sol was created by Felix Hernández Monterrosa and Adriana Correa, who are perhaps most well-known as the owners and operators of the Mezcales CUISH mezcalerias in Oaxaca City. Given the demands of the two mezcalerias, as well as some additional agave projects, the two of them created Agua del Sol with the intention of using to brand to present tiny batches of mezcal to the world.

Not sure of lot #

Nose is sweet grass, floral and slightly cheesy.

Taste is damp soil, a funky herbal taste that cuts through well, and ends dry with a slight green pepper spice. Very smooth with little alcohol heat to note.

Like a lot of Karwinskii’s the humid soil taste is there but not as much as other types of Cuishes I’ve tried.

Batch XI/2020. The nose reminds me of a barn and hay, with a floral side.
This is delicate, get notes of lavender, lemon peels, chalk. Interesting bicuishe.

Batch XI/2020. Bottle 97/120. Sugary aromas of Pixie Sticks, plum, blueberry, and peaches. Additional aromas of fresh flowers in spring. This smells really delicate and soft. The palate is bready. There are notes of fresh yeast, sourdough, pie crusts, and meringue. There’s also an element of Camel Lights, cinnamon, and Dr Pepper.

Insanely delicious. Smells of banana and wonderfully spicy and floral.

Batch: IX/2020 Bottle: 110/120
Nose – Sweet and floral. Wet, gardening soil. Slight vanilla bean. I love how this smells, very inviting.

Palate – Flower petals galore through the entire journey. More wet soil like in the nose. Graham cracker sweetness. Drying effect in the middle. A nice, surprise spiciness (a subtle vegetal, hot pepper) pops through in the finish and a fair bit of smoke. Overall – a pretty solid Karwinski.
