Agua del Sol Mexicano was produced by maestro mezcalero Francisco Garcia León, who was one of the original producers to inspire the creation of the mezcaleria CUISH. His family has made mezcal for several generations in San Guillermo, but in 1996 he emigrated to the US to support his family. He left behind several batches of mezcal which upon his return would be the basis for the creation of the CUISHE brand. He returned many years ago, and now produces mezcal using a horse-drawn tahona, sabino wood fermentors, and a copper still with refrescadera.
Agua del Sol
Agua del Sol was created by Felix Hernández Monterrosa and Adriana Correa, who are perhaps most well-known as the owners and operators of the Mezcales CUISH mezcalerias in Oaxaca City. Given the demands of the two mezcalerias, as well as some additional agave projects, the two of them created Agua del Sol with the intention of using to brand to present tiny batches of mezcal to the world.

165 reviewsBought this bottle last year and I am finally getting around to reviewing as I savor its last drops. Flavors have definitely changed as the bottle has gotten less liquid in it. I know that this agave can be a bit polarizing; I have heard from regular mezcal drinkers that it can make them sick to their stomachs. I actually find this agave in general enjoyable, and this mezcalero’s hand with this agave in particular, very enjoyable. The nose does have some spicy and toasted notes, very interesting. I am getting a bit of that dryer sheet note that others have noted about mexicanos, and a palenqueros mexicano to be specific. The flavors on the palate also have some nut, like almond, sandalwood, and a nice mix of savory and faint sweetness. A touch of black pepper provides some heat and in the background is a touch of astringency. Flavors were stronger and more pronounced when I first opened the bottle. Would definitely purchase a bottle of mexicano from Francisco again, great value.

155 reviewsi have had this mezcal by 2 different mezcaleros (one by leon and the other by santana).both are excellent.this review is for the santana version (92% abv).the nose is fruit forward and sweet with no harsh vapors.the palate is very controlled and compact.pear and apple(sweet not tart).agave sugars and a dry hay finish.very soft.some black pepper.i get something very similar out of the el jolgorio mexicano.lovely mezcal and a bargain price

643 reviewsCinnamon cherry wood candy notes along with some bitter chocolate. My thoughts have changed a few times as I’ve tasted it but really enjoying it now. Definitely try it if you see it. An excellent value at around $80 USD for a 750ml bottle. Lot v/2020.

Baking spices stood out most to me with just a killer sweet potato/pumpkin pie hints I can’t get enough of. Miahuatlán has quickly become one of my favorite regions for production – looking forward to more of these small batch offerings in the future.

Nose: Smoke is super sweet and has a tingling effect like pop rocks. Picking up that brand-new, athletic store rubber too. Great nose!
Palate: Honey sweet. A slight milkiness to it, medium viscosity. Finish has an awesome, hot-spicy heat to it – the perfect amount. All around this stuff is incredible!

The palate is rich with milk chocolate, cinnamon, fresh vanilla beans, and freshly cut jalapeno peppers. Medium viscosity and a bit of heat on the back of the palate. This is phenomenal, and I could sip it all day.
