About this destilado de agave

Agua del Sol Tobasiche was produced by maestra mezcalera Berta Vazquez in San Baltazar Chichicapam, Oaxaca. The Agave karwinskii was roasted over mesquite and encino in traditional underground pits and milled by horse-drawn tahona. They were then naturally fermented in sabino vats and double distilled on small copper alembic stills. The batch from April 2019 was just 300 liters.

Agua del Sol

Agua del Sol was created by Felix Hernández Monterrosa and Adriana Correa, who are perhaps most well-known as the owners and operators of the Mezcales CUISH mezcalerias in Oaxaca City. Given the demands of the two mezcalerias, as well as some additional agave projects, the two of them created Agua del Sol with the intention of using to brand to present tiny batches of mezcal to the world.

Batch No. IV/2019, Bottle No. 49/290, 46%, 200ml

Nose – Strong, sweet industrial tone that leans fresh; gasoline, wet asphalt, Sharpie marker, ginger, and morning grass.

Palate – Bright opening that has an overall bittersweet body that fades dry. Fruit pith, orange rind, grapefruit. There’s a tangy twist in there as well; ginger, sweet and sour sauce.

Finish – The dryness takes over and gives you a nutty flavor; walnuts, chestnuts, and flavorless gum.

The initial bright opening is a lot of fun, but it doesn’t pay off. Instead it wanes and gives you a dry finish with no punch. It’s obviously good being a Berta, but not special. A decent sipper overall.

Batch VI/2021.

Didn’t like this too much when I first opened the bottle — seemed all smoke and savory notes with no balancing sweetness. Left alone for a while and now tastes great. It’s still not that sweet, and it’s still pretty smoky. But it’s complex and interesting with many flavor notes in each sip. A seaside tang, vegetal, wet slate, bitter green bell pepper and others. Longer finish. Would buy more.

Giving this a 3.5 because I got it for $60 on sale. If it were the usual $80 I would go for the Alipus San Andreas which has some of the same characteristics and is way better.

Nose: Smoked cherrywood and fruit?
Palate: Smooth and coating with a bit of a tingle on the tip of the tongue
Taste: Mineral, with a bit of that inner tube / burning rubber, mint and clay.

Not going to buy another though

On the nose, deli sandwich sprouts. On the palate, similar grassy and garden water notes. Once you settle in, the flavors become a bit darker. There is burnt peat and tart dried peach. I enjoyed this more the first time I had it. Like some of Berta’s other mezcales, the smoke is a bit strong for me. Batch IV/19, 200ml bottle 10/240.

Nose: Peas, I’m unfortunately allergic to legumes so take this with a grain or eight of salt, but lots of green legumes. Yams, minerality like in Smarties, roasted potato slices, grilled beefheart tomato, I’m also allergic to nightshades. Let’s hope I don’t die from this XP. Jokes aside, more typical notes appear with a rather obvious smoke, like most of her works. Sticky buns, more yeast notes, cinnamon, complex. I’ll look forward to seeing other (and better) interpretations.

Palate: Entry is light, sweet, bright – chamomille and a little ginger. Unfortunately this hits on some of those acrid and white pepper tones I seem rather sensitive too, leaving an unpleasant ashy bitterness that tampers away many of the fun starchy notes. Time in the glass helps, but not enough. The finish is mediocre, acrid.

Lot IV/19. Aromas of spring flowers, sea salt, and a bit of tropical fruit. The palate is soft with a bit of slate, spearmint, and some smoke. Berta’s batches are very hit or miss for me, but this one is a hit.

Berry compote and lavender. Damp, wet soil, with a minerality and organic notes. Really deep and enjoyable profile.

Earthy,light sweetnes but not to sweet.Fresh green grass.Nice taste of minerals coming through.Just enough heat at 92 proof to give it a little edge.Good Bang for the Buck.Would make a great everyday sipper.

Nose: A humid greenhouse. Soil rich, sweet and grassy.

Palate: A minty and vegetal sweetness. Light to medium smoke. Sweet and salty finish – a bit hot and vapory. A lasting saline and slightly ethanol aftertaste.
