About this destilado de agave

Lamata De Castilla is produced by distiller Jorge Torres in Santiago, Nuevo Leon using Agave Americana and fermented with pulque. The agaves are cooked in an underground oven and mashed with wooden mallets. The agave fibers are fermented with pulque from the same agaves. Next it is doubled-distilled in copper alembic pot stills. The final distillate is adjusted with heads and tails.

This agave spirit is distilled in the colder mountain regions of Santiago a few hours outside of Monterrey, Nuevo Leon. Due to the colder climate, a large amount of pulque is added to the fermentation instead of water, the final mix is about 40% roasted agave fiber and 60% pulque. The main agave in this region is “De Castilla” – Agave Americana. There is also some Agave Asperrima “Cenizo” and Agave Gentry. There is some hybridization between the Agave Americana and the Asperrima, and a good amount of genetic variation within the Americana variety itself. These producers hand mash the cooked agave in a small rock lined pit with a wooden mallet (seen in drawing on front label). The addition of large amounts of pulque to the fermentation makes this mezcal incredibly unique in terms of aroma and flavor.

This bottle was originally released under the brand name Amormata; it was rebranded to Lamata prior to the release of the second batch.

Lamata

Lamata (formerly named Amormata) is the for-export label of Nacion de Las Verdes Matas, a small unregistered brand started by Luis Loya many years ago. His goal is to share mezcal from Northern Mexico from places that are under-represented in the market. Luis has relationships with producers in Durango, Nuevo Leon, Sonora, Chihuahua, San Luis Potosi and Tamaulipas among others.

The typical lot sizes of Amormata releases range from about 40 liters to 200 liters. The producers will continue to make about the same amount of spirits that they historically have in the past. Therefore, the brand will not bottle much more than a total of three to five thousand liters per year. Amormata is dedicated to promoting the “gusto historico”, the terroir, the liquid culture, and the history that is mezcal to people beyond the borders of the places where it is made.

This review is just an impression of a small pour from a big Lamata tasting. No bottle info. Will update if I try again.

This is really interesting stuff. Honestly, I wouldn’t want a whole bottle of it but it is pretty unique to sip on.

Nose: More tamarind, more candied oranges, coffee grounds, not far from the above. A few more herbal notes, mint, cornbread, grilled watermelon. More earth. Stealing a note from those below, I get the “creamed corn”.

Palate: A little more “Angustifolia” than the [gentry sample from this producer] but my oh my that’s only because I know and have a reference point on hand. Some heat on entry. Those warm sweet spices explode on the finish with a waft of vanilla. A little more grip to the texture, a wonderful “florality” I’ll call coconut blossom for now. Very tail end has some earth.

Thoughts: Out of this world, what a great gateway to the wonderful world of Nuevo Leon.

Conclusion and “t8ke” scale rating: 7/10. Tempted to go to an 8. Every sip is different.

?- pungent and prickling impact.
Aromas of sour honey, sweet corn, honeysuckle, pollen, aloe vera juice.
Very powerful intensity, simple production.
Average length and ordinary character.
?- Astringent, and lightly coating and warming effect; generous rough alcohol; medium-full body.
Primarily sour and sweet taste,; buttery smoothness.
Flavors of sweet corn, pollen, aloe vera, sour honey, honeysuckle, light spices.
Concentrated flavor intensity, simple, correct-bold balance.
Straightforward and very long finish.
Good overall impression.

*Not very exciting character, maybe slightly monotone, and I feel like great qualities of agave got lost with the canned/sweet Corn smells, likely a lack of amino acids, or nitrogen during fermentation of the must or pulque, creating an imbalance in sulfides. Also, slight roughness of alcohol. This was threading the line between a poor/good rating.

Palate – roasted corn tortillas, Mexican mixed cheese, caramelized onion (sweet)
Finish – smoky corn, oily, steamed rice

This was an absolutely delicious mezcal. It was very unique and would be unreal with some street tacos.

Nose: Overwhelmingly canned cream corn.

Palate: Cream corn again in abundance, but not as pronounced as the nose. Some latex – like opening a new band aid. Mint and white pepper heat.

This is decent – but the canned corn notes are a bit much.

Lot CAS-T 13-02-2019. Smells like a funky Rhum agricole, Olive brine and boiled grass. Tastes like canned corn, and olive brine and boiled grass. This is unique and definitely worth trying, it was a big hit with other people in the tasting but not my favorite.
