About this raicilla

Bonete Raicilla Sierra is made with agave Maximiliana in a single distillation. The agaves are cooked above ground in an adobe oven with black oak firewood. They are then fermented with wild yeasts, and single distilled in a stainless steel alambic still.

Ramirez was my supplier for this raicilla as well. So different from the other raicilla de sierra that I purchased (Puntagave) on the nose: rubber gloves, wet decomposing leaves, and freshly baked muffins with walnuts. The flavor gets back into the same sierra wheelhouse: lemon and lime, chalk, saltines, and tart green apples. Repeated sips and airing it out a bit bring out a bit more sweetness, like a chamomile honey, and some mild cheese similar to a light brie. I agree with the other reviewers here – Zack and Rakhal – that the lower abv does not dilute the flavors at all. I have heard that raicilla is traditionally distilled at a lower abv so don’t be dissuaded from trying them if you prefer those higher abv agave spirits like I do. My lot seems a bit different from the the others reviewed (#1), not sure I get the guava or tropical fruit, but several of the other flavors and scents seem to be present for me as well. Grab a bottle if you can find one under $75. 3.75 stars out of five.

Nose – Honey. White chocolate. Allspice. Flower petals (can’t nail down which kind of flower).

Palate – Funky lemon meringue – a sour combo of the filling and topping. Light potpourri. Some tri tip seasoning saltiness and spice in the finish. A crazy amount of flavor for 42% ABV – this easily tastes like a high 40’s ABV agave spirit without the heat. Very nice!

You’ll drink this last. Nice grapefruit for me. Subtle tones and good value sipping. I’ll replace this bottle.

Very tropical. Guava, mango, passion fruit. It’s really floral too like plumeria flowers. There’s a faint sour lactic note that I’m really digging. I’m not noticing the lower ABV at all, it’s got a ton of flavor. It’s got a really nice oily mouthfeel too. I love Raicilla and this is a good example of the Sierra region.

Initial nasal impact is warming. Tropical fruit – papaya and guava hit first. Honey and light oregano follow. There is some watermelon Jolly Rancher present and slight fire pit smoke from the neighbors backyard round out the aroma.
Oily, coating and warming mouthfeel with sufficient alcohol. The papaya and guava carry through to the flavor with honey and dill pickle. The watermelon Jolly Rancher starts to show on the flavor as well. The “smoke” flavor is more akin to sweet smoked/grilled tropical fruit. A really satisfying Raicilla. I’d like a bit more heat, as this comes in at 42.4%, but that is a minor criticism. This is a great sipper, and at the lower abv, would make an excellent introduction to raicilla
