About this mezcal

Bozal Borrego is a limited release. This mezcal is made with wild maguey Castilla, which is a close relative to maguey Espadin. Similar to a Pechuga, during the second distillation, a leg of lamb, in addition to seasonal wild fruits and grains harvested from the local market, are suspended inside the bottom of the still in a basket. These wild fruits include strawberries, apples and pineapple, while additional ingredients consist of pecans and ginger. This mezcal is heavily viscous. It is fruity, but balanced with notes of citrus and finish of smoked lamb.

Mezcal Bozal is a craft, artisan, handmade Mezcal. They celebrate the wild side of the Mezcal world and the wild agave used to produce such rich spirits. They use agave from the steep precarious hillsides of Oaxaca and Guerrero that are indigenous to the region. These varietals produce flavors that are exotically intense, with rich earth tones and savory smokiness. From the heart of the maguey these flavors are traditionally extracted to produce mezcal that is wildly refined.

Nose: lime, petrichor, vinegar, pineapple juice

Palate: cumin, cinnamon, savory Some lime and lemon. Leading into finish is ton of citrus. Finish gets a bit minty and herbal. Mineral, Hot peppers

This is fine. Good without much depth. I hoped for a bit more with the lamb shank but it doesn’t feel like that adds much.

Nose – Dusty. Lean lamb. Lemon zest.

Palate – Tiny bit of pine. Allspice. Gala apple. A nice bit of lamb. Sea salt. Great balance for a pechuga. One thing I’m not a fan of are when they are too fruit or especially spice forward. Way better than the Bozal Iberico I had last year.

I must have got a really good batch! Smells like pineapple on the nose, first couple of seconds taste pineapple and spices, followed by delicious smoked and salty meat. Similar to their Iberico

Medium mouth feel – pepper, some smoke and minerality. Nice pepper and onion note. Gamey as heck, and oily as hell.

This is unique and exciting, though the finish is smokier than expected. That said, it plays well, especially with how gamey the palate is. Giddy up.

Lot 000217 … Aromas of mineral and spice. Flavors of grassy herbs, vanilla and cinnamon. A long savory finish with a hint of citrus. Enjoyed neat. 52% AbV

Dark bitter chocolate, intense spice, lemon peel. Overall a ‘dark’ mezcal. Finish is a bit dry. More meat on the nose than the palate. My friends enjoyed this a lot but it is not for me.

Lot 000117 from Dec 2016. There is a lot of soft spice on this! Cinnamon, vanilla, and lavender notes are bright. It has strong flavor of ground nuts and smoked meat. Very smooth for 52% ABV. There aren’t many Borrego Mezcals on the US market and this one is worth trying.
