About this mezcal

Bozal Sacatoro is made with agave Sacatoro. The Bozal brand says that this is a subspecies of agave Angustifolia (i.e. related to maguey Espadin), taking between eight to twelve years to mature before being harvested from the hillsides of Guererro. As stated in this biological research, however, “The taxa agave Angustifolia ‘Sacatoro’ and agave Angustifolia ‘Espadín’, are finally the same species. Although both can be distinguished morphologically, the results confirm a close relationship between them. Therefore, the morphological differences could be attributed to the vegetative selection and propagation of the germplasm with desirable characteristics due to the excessive use as raw material for the production of mezcal.” The study goes on to say; “the specimens of A. Angustifolia ‘Sacatoro,’ although they are located in a separate subgroup, are also part of [the group] that makes up A. Angustifolia ‘Espadín’. Said sub-grouping is due to the type of management of the plant.” Essentially, this research seems to state that while Sacatoro has slight variations in how it looks, those variations are caused more by how the plant is managed by humans than by any biological factors.

Grass and beans on the nose. Citrus, grass, light and peppery finish. A nice smooth balance and easy to drink.

Wildly different than I expected. While it’s listed as angustifolia it was completely different than an Espadin. Vanilla, ripe banana, citrus, the works. Be sure to try this if you see it!!

If you think all espadins taste the same or terroir doesn’t play a big role in the taste of mezcal than you need to try Sacatoro. Its essentially an Espadin grown in Guerrero but the profile is vastly different than any other I’ve encountered. Veggies and minerals come in strong and then I get a citrus/cheese like taste on the finish. Hard to pin the profile down on this bottle – worth a taste – not sure if I would want to buy an entire bottle.

Yes I read the notes, but tasting this sacatoro after an espadin… It’s very different. Fresh grass and veges aplenty, even bit of cooked greens. Mineral flavours with a hint of fruits if you wait a bit tween tastes. Sweetness comes next, not enough for candy but… A nice syrupy mouth feel, some lip licking if you linger on your glass. Sweet vanilla bean, cream cheese frosting. Pepper, snap pea, green beans, cabbage, minerality. This is pretty complex, with a nice balance between sweetness, pepper, and vegetable garden. Mouth feel is medium, medium+, with heat squarely in check.

This is pretty nice, in fact it’s very good. I like the veggie presence here, along with everything else that screams classic mezcal to keep it in check. Big fan.

Nose: Strong, Punchy. Fresh Ripe Strawberries, savory minerality, Roasted Bell Peppers, slight meatiness,

Palate: Medium oily mouthfeel. Fresh Ripe Strawberries, tangy citrus, lemon zest, savory black pepper.

Finish: Long length, warm, roasted pepper, eucalyptus, ripe strawberries, mango, lemon zest, minerality, mesquite, brine. The mesquite and minerals linger for awhile on your breath.

This is a well balanced delicious offering that I want a full bottle of in front me now. Strong bright fruits, savory minerals and vegetables with some earthiness to it. Bozal has impressed me with the few offerings I have had from them, and I look forward to trying more of this line.
