About this mezcal

Chacolo Chancuellar is made with Maguey Chancuellar (Agave angustifolia) in the state of Jalisco. Chancuellar is one of the fourteen Agave angustifolia grown by this producing family. This agave takes about 10 years to reach maturity, with 3 additional years of capon. The agave are cooked in an underground oven and milled by hand with axes. Once cooked and milled, the agave are fermented naturally in wooden tinas with mountain spring water. Finally, they are double distilled in a Filipino style still.

Chacolo

The Partida family, lead by Don Macario, has been making their iconic “mezcales” for 5 generations in Zapotitlan de Vadillo, Jalisco, however due to legalities they can neither call their product mezcal nor tequila. They are renowned among mezcaleros and mezcal aficionados for the amazing spirits that are meticulously made from the 15 different agave varietals that they have been collecting from their region for three generations. These varietals include 14 A. angustifolia sub varietals and 1 A. rhodacantha sub-varietal.

More interesting than the Chacolo Lineño to me. Interesting notes like if Hot Tamales candy were made using orange peppers and honey instead of chemicals and sugar, etc. Sugary candy that doesn’t linger like a can of soda.. almost like a mint tonic soda from Whole Foods (if that exists). Lot 001, 42 liters, Febuary 2020.

Nose – Musty. Fresh mint. Grape Jolly Rancher.

Palate – Mouthfeel is watery. Cola bottle gummy flavor. Add to this some mesquite, crush mint and dried sage. An honest 47%, a few notches hotter perhaps. A big hit of a flat Coca-Cola and Sprite syrup mix up in the finish – quite dry as well. This mezcal is hella flavorful although they don’t necessarily work for me. Also, this is too thin (feeling) for my liking. Comme ci, comme ca.

Produced in Feb 2020. 41 liters. Aromas of vinegar-based BBQ sauce, 7Up, cilantro, and mustard seeds. The palate has notes tomato paste, smoked pork ribs, black pepper, mesquite, sage, brown sugar, and sweet duck sauce. There’s some nice heat. Incredible.
