About this destilado de agave

Chacolo Presa Grande is made with maguey Presa Grande (agave Angustifolia) in the state of Jalisco. Presa Grande is one of the fourteen agave Angustifolia grown by this producing family. This agave takes about 10 years to reach maturity, with 3 additional years of capon. The agave are cooked in an underground oven and milled by hand with axes. Once cooked and milled, the agave are fermented naturally in wooden tinas with mountain spring water. Finally, they are double distilled in a Filipino style still.

Chacolo

The Partida family, lead by Don Macario, has been making their iconic “mezcales” for 5 generations in Zapotitlan de Vadillo, Jalisco, however due to legalities they can neither call their product mezcal nor tequila. They are renowned among mezcaleros and mezcal aficionados for the amazing spirits that are meticulously made from the 15 different agave varietals that they have been collecting from their region for three generations. These varietals include 14 A. angustifolia sub varietals and 1 A. rhodacantha sub-varietal.

Nose: Cherry jolly ranchers and blood orange.

Palate: Cherry and raspberry. Blood orange joins after. Then there’s this odd fluoride mint note that reminds me of going to the dentist.This doesn’t feel cohesive, but it’s fun.

Finish: That fluoride lasts. When I first tasted this with friends I got a vomit note that I hated, but it wasn’t here this time. Long length.It actually turns into a more refreshing spear-mint like note.

Overall: The fruit and mint combo is kind of fun. I just don’t like the acidic blood orange notes. Reminds me of brushing my teeth after drinking orange juice.

Chacolo Presa Grande lote 002 january 2020 (47.1%)

nose: super bright cherry limeade, gingerbread, engine oil, roasted turnips, soft floral pears, bit of roasted guava, raita

palate: a glistening acidity balanced with rich holiday sweetness – allspice figs and rich chestnuts, pink lemonade, very mild creamy cheese

mouthfeel is lovely, finish hangs for days. 9/10 straight money.

Nose – Red Twizzlers licorice. Warm cream cheese on cinnamon toast.

Palate – Big blast of cinnamon sugar and allspice. A funky-lactic cheese cake. Grilled corn husk. Charred hickory brown sugar BBQ sauce and chicken breast skin – delicious! This stuff is off the hook!

What Jonny said. Definite pepper jack nose, taste is full of kiwi, pear, and slight chili powder. Complex, slightly sweet, smooth. Chacolo is on a damn roll

Lot 001. May 2019. 32 liters!** Volume 4.

I cannot believe how small this batch I!. Absolutely took hold of me, this pour. Some serious blue type cheese on the nose and that somehow translated again to what was on the palate. The warm creamy texture with that lactic addition was totally impressive. I cannot believe how different these are while still being Agave Angustifolia. Incredible mouthfeel and different from most other alcohol I’ve ever had. Crazy!

Vol 4. Jalapeno pepper jack cheese nose. Aromas of nutmeg, peanut, toffee, and clove as well. Palate is complex and down the middle. Like a perfectly made mole sauce: rich, intricate, balanced between savory and spicy. There are some flowery and nutty notes riding through this as well.
