Cómplice Tepeztate-Jabalí-Tobalá is an ensamble mezcal produced by Mezcalero Epigmenio Martínez Pérez in Santa María Albarradas, Oaxaca. This ensamble is composed of 30% Agave convallis, 30% Agave marmorata, and 40% Agave potatorum. After the agaves reach maturity they are harvested and cooked together in a river-stone pit oven. The cooked agaves are crushed by a horse-drawn tahona. After fermenting in oak wood vats, it is double distilled in copper stills. This mezcal has herbal notes along with citrus and fruit.

This mezcal is part of the limited edition Cómplice de Pasión series made from wild agave.

Cómplice Mezcal

The name of Cómplice Mezcal comes from a story. One night, a man learned of the existence of a legendary mezcalero who had the gift of capturing the essence of a person in the drops of mezcal. The man was determined to find the master. After a long period of searching, he finally found the legendary teacher. After talking for a long time, the master agreed to reveal his secrets, giving rise to a mutual complicity: whenever any of the descendants of the man found the teacher, he would teach him to capture the essence of a person in a mezcal in exchange for keeping the secret within the family. This is how, generation after generation, members of the family have maintained the unique flavor and secret of the mezcal: Cómplice Mezcal.

This is a fun ensamble. The Tepeztate is apparent along with the Jabali notes. I usually think of Jabali as woody-soapy in a good way. I need a better way to describe it but the flavor is unique across different batches and brands. The fruit tape Tobala notes provide a nice finish and is more of a backdrop despite being 40% of the ensamble. I enjoy the mezcals I’ve tried from this mezcalero. Bottle #96, lot EXEN001, 2020.
