About this sotol

Sotol Coyote Chihuahua is produced by Maestro Sotolero Gerardo Ruelas in Aldama, Chihuahua. It is produced from 12-15 year old Dasylirion Leiophyllum and cooked in a conical stone oven using mesquite wood. It is then crushed by stone and fermented in oak vats using well water before being double-distilled in copper pots. This sotol is kind on the palate despite the strong character and has herbal, smoked and mineral notes.

Coyote Sotol

Sotol Coyote is a social project that involves the true essence of the wild, pure and natural. Clan Coyote’s handcrafted Sotol Coyote is equal parts art and science. Relying on centuries of experience, it is one of the few drinks in Mexico that retains its ancestral method of preparation. Every bottle of Sotol Coyote contains the distilled nectar of a single plant which provides a rich bouquet of unmatched flavor.

Not sure of lot #

Nose is very vegetal with some firewood

Taste is very anise forward with floral and nutty notes to follow. Some basil to note and was fairly fruity and very smooth with low heat on the palate.

Full 4 stars no question. Lot 057. Spreads evenly across the palate and fades before returning for an encore that lasts. Presumably, if you like mezcal, you will like it very much. Eminently smooth at 50%. I’d purchase another of this one if I saw it.

I liked the Durango more, but the Coahuila less.

Lote: 057
Nose – Pine needles. Very grassy.

Palate – Thin viscosity but still somewhat slick. Big time campfire ash. Anise. Celery which makes it kind of bland at first. It takes a while for the aftertaste to kick in but then there’s the payout: a definite, dry, smoky meatiness to it. Also, pineapple citrus. Like campfire roasted, pineapple-marinated, chicken breast. This one is slow outta the gates but comes strong in the end.

Richer, sweeter, and more complex than their Durango expression. I got some citrus, dried fruit, mint, herbs, hay, etc. Great review from @wanderingspider to sum up this easy to drink Sotol.

No Lot on the BTL ? but I like this.
Nose- Pleasant grassy, green earthiness that is there without being overwhelming.
I’m not getting a ton of the anise it’s known for but it’s apparent for sure. Roasted pineapple and mint as well.
Palate- lemon/citrus peel, eucalyptus and a nice texture. Balance is really good for 50%, as is the value.

Lot 057

Sweet nose I up front that reminds of bananas foster and salt water taffy. Moderate smokiness emerges after a vigorous swirl. The fragrance settles at cured European ham and provolone. Grassy and herbal taste. Light and clean, not nearly as robust as the nose suggested. Mint, parsley, and cilantro flavors emerge. Such a clean finish. The palate is left dry after each sip, one of the more drying finishes you’ll experience with a distilled spirit. Zero burn for being 100 proof. Simple things aren’t always easy and this is simply delightful to drink.

There are some bold anise flavors along with basil as another review mentions. The spirit itself doesn’t immediately jump out as being a sotol. Instead of the dry grassy notes found in many sotols, this sotol is very rich and fruity. For being 50% ABV, I wouldn’t have guessed it because there is nothing harsh about it. This sotol is also under $50 USD a bottle which is a good value.
