About this sotol

Sotol Coyote Durango is produced by Alejandro Solís in Cuencamé, San Antonio, Durango using Dasylirion Cedrosanum. The piñas are steamed with an autoclave and then fermented in wood tubs coated with stainless steel. This sotol is double-distilled in stainless steel stills. Sotol Coyote Durango has distinctive aromas of hazelnut and almond with notes of butter and yeast coming from the fermentation. On the palate, it is semi-sweet with medium intensity and slight minerality.

Lot: (it’s blank)

Nose of fresh cut grass, mint. Trout actually on the take. Kind of like when you take a trout fillet and cook it over a fire wrapped in tinfoil with lemon, salt and pepper, some bell peppers and potatoes. This is quite nice at 45.99. Another example of why it’s not common to find a bottle over 100 that’s worth two finds at 50. I am happy to sip this one.

Just re-tasted the Chihuahua, and this Durango is far superior. I’d highly recommend grabbing a bottle of this if you see it. Extra half star for the bargain.

Had the Coahuila, Durango and Chihuahua at a Speakeasy in Oaxaca. This was my favorite Sotol to date

Smooth almost to a fault – some great Sotol options at this price point so I’d go elsewhere – Even their offering from Chihuahua is preferred. Great tasting notes here from other reviewers but I found mostly earthy, tobacco, gentle smoke, and mineral sweetness. I’m still learning how to enjoy Sotol though so just a novice POV.

Adequate and complex production aroma.
Average length and ordinary character.
?- coating and astringent effect; sufficient smooth alcohol; medium body.
Primarily sweet taste with highlights of sour and bitter. Buttery smoothness.
Flavors of ripe funk, pineapple, mango, passionfruit, guava, starfruit, camote, chamomile, rosemary, honey, light leather, horse sweat.
Medium concentrated flavor intensity, complex character, correct balance.
Straightforward and long finish.
Very good overall impression.

Another foray in to the Sotol genre this evening. Immediately it is soft and welcoming, whisps of tea tree and licorice accents fill the nose, while very mild tobacco smoke envelops the palette with touches of ripe mango and papaya flesh, it finishes fast yet thorough with an ABV of 44%. Sotol is a diet soda of the agave spirits world so it cannot be compared to a mezcal. I recommend this product because it is well made and pure. One issue with the packaging is the yellow (plastic) “wax”. It is a pain in the ass to remove!! Once you get that done enjoy~!

Quite smooth, but to the point that it lacks character relative to other Sotols. This is a good Sotol for newcomers, with a gentle mineral character, slight herbal and faint smoke. It gives you a good idea of what the desert spoon has to offer without going too over the top.

Sotol Coyote Durango Blanco 43% LOTE not listed

Appearance: Thin beads, med-thin legs.
Nose: Mineral, floral, not detecting much sweetness. Lavender, peat, light violet, lemon zest, sausage, wheat, basil, walnut, brazil nut, mildest hint of dried papaya, lime, eucalyptus. Very subtle, not very aromatic. Water and time brought out yuzu sweetness, nice. Some salted butterscotch actually, too, and a touch of fig newton.

Palette: Subtle entry to full sotol flavor on the palette, no smoke really detected. Acidic flavors, paint thinner. Spicier side of sotol gives some era of vibrancy, could see this great in a martini. Finish is dense but long with those spices lingering with ozone/acetone. Time and water help with sweetness and body. Spices hit the tongue tip now but the main body is improved.

Thoughts: First pour, not super impressed. Gonna drop 5 drops of water, cover it, and come back in a few. Yeah, that really helped. From a 3* to a 3.5* probably.

A month later: this really needs to oxidize, it seems. Some complexity hiding in the palette (greater nose) but the sweetness has grown.
