About this mezcal

Del Maguey San Pablo Ameyaltepec is also known as the Papalote de Puebla and is part of the Del Maguey Vino de Mezcal collection. This mezcal is made by mezcalero Aurelio Gonzalez Tobon. This is a very floral mezcal that has notes of spice, lilac and tropical fruit. The agave Tobala gives this mezcal bright citrus notes that balance with its creamy texture. Newer batches may also contain small amounts of maguey Pizorra (agave Marmorata), which is part of the same genetic family as Tepextate.

Del Maguey Mezcal

Del Maguey (pronounced ma–gay), Single Village Mezcal was founded in 1995 by internationally renowned artist and Mezcal visionary, Ron Cooper. Ron introduced the world to previously unavailable 100% certified organic, artisanal Mezcal produced the original handcrafted way. Through deep cultural relationships with Zapotec Mexican Indian producers in the remote villages of Oaxaca, Mexico, Del Maguey harnesses ancient, original organic processes. Combining these methods with varying micro-climates and terroir gives each creation its own unique, rich, sweet and smoky character. Every product in their collection is made by individual family palenqueros (producers) in old-style villages. They are the first producer to credit each product after the village where our liquid is made. When you see their beautiful green bottles you know it’s Del Maguey. Most of Del Maguey’s mezcals are distilled to proof, so the ABV will vary slightly between batches.

In June of 2017, international spirits company, Pernod Ricard, purchased majority stake in the company. Del Maguey is now part of their portfolio that includes Jameson Whiskey, Absolute Vodka, and Havana Club Rum.

Pizzora/Papalote Batch

Nose: smarties candy, kiwi, mango, pineapple, floral, nail polish

Palate: so fruity. I get tons of cantaloupe melon, a bit of dried tart mango, charred pineapple moving toward the finish is more minerality, a bit of slate. Finish is a charred flowers but not overly flowery. Coffee, just great and long lasting

This stuff is awesome and the best of DMs Ive had. So much fruit, slightly floral and balanced minerality

If you are going to buy a Del Maguey release, this is personally my absolute favorite. It is also one of my favorite tobalas in a fruity style. Holds up against many other premium bottles even now. Have had 3 bottles of this over the years, 2 from PUE-161 (the original run without Pizorra) and one from a later batch with the pizorra.

An overwhelming wave of thick, syrupy liquid with notes of mango, papaya, flowers, and rain. When you first open a bottle, there is just a hint of tamarind/citrus/vinegar that goes away the longer keep the bottle longer open, transforming into a floral/lilac note overtime. The version without the pizorra is slightly fruitier, the version with it is ever so slightly drier/thinner in texture – both are exceptional though. What really stands out to me is the finish which lingers on the tongue for many minutes.

Pricy but this very smooth, floral and tropical agave sp is something beautiful. Currently my favorite of the Del Maguey lineup. Hard to track down but worth it if you can source this unique offering!

Nose – Dried pineapple. Dried papaya. Rich tropical fruit.

Palate – This is like a crazy good charcuterie plate of soft, creamy cheese and dried tropical fruits. A nice floral (lilac) note complements this. The smoke and heat are just right. The sum of the aforementioned flavors bond together into a very long finish. Man, this a great mezcal!

This could be the smoothest mezcal I’ve ever had. Jasmin, lilac, faint smoke and peach skins on the nose. Creamy, tropical fruit cocktail on the palate, with carambole, papaya and lychee but also floral notes, with chamomile and a vague undefinable mix of perfume and leather. Not sure what to make out of Del Maguey’s new website where it looks like this is now an ensamble of papalote and pizorra (presumably cupreata and the smaller Puebla version of marmorata).

N: Honey pollen, caramel, flowers.
P: Salt, leather, ocean breeze, butterscotch. Yum. Slightly thin mouthfeel.
F: Agave, butterscotch, smokey slightly burnt caramel, some lingering saline.
Try it! I like this and Del Maguey’s Tobala, and they are about the same price.

Sweet on nose – some overripe fruit notes. Minerality and slight clay on finish. Overall very well rounded…slightly too much alcohol lingering at the end to my liking, but perhaps will mellow out a bit in time. Not quite the same as other tobalas I had with the typical sweetness (it’s a good thing). In my opinion, slightly better than the Chichicapa. 4.25 stars.

Lot PUE-161. There is a lot going on in this very complex mezcal. There is no harshness here, just light and rounded flavours, in particular cream and rose water. And sweet fruit like raspberry and pear. And a bit of cheese. The more you drink, the more flavours you detect.

lot PUE-161. took a while to come around after opening (where it was boozy and abrasive), but it’s settled into quite the mezcal. big time ripe tropical fruit tempered by woody notes and rich earthiness on the palate. finish gets a touch medicinal. almost a 5. neck and neck with the arroqueno for favorite in the DM range.

this is very good.its light and i got the floral and tropical fruit notes.no harhness and very refined.very little hint of alcohol.it is as close as it can get to 5 stars but fell a little short.the finish was sweet but vanished way too fast.i like a mezcal that lingers a little or alot if it has great flavor.this was the same effect i got from the koch mexicano.incredible flavor and then-poof.gone.no more. thats why i am a fan of the vago brand.tio rey and emidgio make mezcals that linger with lovely complex flavors.dont get me wrong.this is still a very good mezcal!

The San Pablo Ameyaltepec was one of the first certified mezcal’s exported from the state of Puebla and the producer is the newest member of the Del Maguey family. This mezcal will get you excited about the talented mezcaleros in Puebla. It has complex and composed flavors of pear, tropical fruits like mango and pineapple, and some candied sweetness. I’ve enjoyed it a few times and like it more with each subsequent tasting. Even after trying a newly opened bottle, there is no bite, just a touch of sweet vinegar. Lot 16-1.

Sweet and fruity on the nose. Rich aromas! Floral palate that’s also full and rich with deep, dark fruit and light touches of pollen and fresh rain. This is my favorite Del Maguey on the market. They’ve really outdone themselves with this one.

Beautiful, exotic, elegant, fragrant. Sweet, savory, soft, yet crisp, the finish is delicately sweet, creamy, and floral. I love the aroma of blooming lilacs remaining in an empty glass. There’s not a single harsh note to San Pablo Ameyaltepec; this is a very delicious mezcal.
