About this mezcal

Agave Jabali is harvested from craggy rocks and cliffs and is known to be difficult to distill. Jabali is Spanish word for “wild boar” because the leaves on the maguey Jabali planet look like the teeth of a boar. This is another release in the Vino de Mezcal series from their secret mezcalero using only sustainable harvested wild Jabali magueyes. The agave hearts are roasted in the earth and buried for two weeks, then ground using a horse drawn stone , and finally fermented with air-borne microbes and then double-distilled. This mezcal was named Best Agave Spirit at Cocktails Spirits 2017 in Paris.

Del Maguey Mezcal

Del Maguey (pronounced ma–gay), Single Village Mezcal was founded in 1995 by internationally renowned artist and Mezcal visionary, Ron Cooper. Ron introduced the world to previously unavailable 100% certified organic, artisanal Mezcal produced the original handcrafted way. Through deep cultural relationships with Zapotec Mexican Indian producers in the remote villages of Oaxaca, Mexico, Del Maguey harnesses ancient, original organic processes. Combining these methods with varying micro-climates and terroir gives each creation its own unique, rich, sweet and smoky character. Every product in their collection is made by individual family palenqueros (producers) in old-style villages. They are the first producer to credit each product after the village where our liquid is made. When you see their beautiful green bottles you know it’s Del Maguey. Most of Del Maguey’s mezcals are distilled to proof, so the ABV will vary slightly between batches.

In June of 2017, international spirits company, Pernod Ricard, purchased majority stake in the company. Del Maguey is now part of their portfolio that includes Jameson Whiskey, Absolute Vodka, and Havana Club Rum.

Review #146: The nose has garden salsa sunchips, leather, red pepper, grains, cheddar, aged parmesan, clay, musty attic, tobacco, and cucumber melon soap.
The palate has cucumber, overripe canteloupe, and guava all up front, then comes the sweet mint, grass, cotton, tobacco, and a little wood.

This is a fantastic Jabali with a lot going on. The nose was probably my favorite part of this, with the cheese, vegetals, and grains sort of making this sunchip thing pop in my head. The palate doesn’t hold up as much as the nose does but it still has a fun complexity with the fruits showing up. This is really unique and definitely worth trying.

LOT: JAB-182 (tasted in 2018)
Has the typical Jabali lawn mower/grass note in taste with a bit of woodiness, green bell pepper, and citrus. Overall a bit thin, but still quite tasty.
One of the better Del Maguey releases but if you want to try a Jabali that’s relatively easy to find in stores and a similar price point, I’d grab a Rey Campero over this any day. Still tasty in its own right though.

Floral and delicate nose, hints of coumarin and granite rock.
The palate is slightly subdued for a second then bursts into tarragon, those small wrinkled olives, Parmesan cheese rind, peach pits — it’s uncanny how it briefly reminds me of an old style Peach bitters from The Bitter Truth. Leather, allspice, tobacco. Fantastic mezcal, all the flavours just wait quietly in line. Well integrated alcohol, bold Albarradas signature of mineral stone fruit.

A few years ago I thought the Albarradas’ mezcales from DM a bit thin and subdued, they now really shine. Compared to recent batches of Jabalí from Rey Campero and El Jolgorio, I think they have gone another direction while this is more accomplished and well structured. Lot JAB-191.

LOT: JAB-182 (47% ABV)
Nose – Tiger lily. Ginger Ale soda. Roast beef deli meat and cheddar.

Palate – A distinct strawberry bubble gum quickly and only at first but then it disappears. Wood notes the whole way (although I can’t decipher or specify from there). Roasted chicken – white meat and skin. Spicy finish (allspice and a bump in heat) and leather joined by baking chocolate (semi-sweet) in the aftertaste. Rock solid Jabali!

Smells great. Grass, flowers, herbs and citrus on the nose. Interesting flavour profile – light but smooth, herbal, some grapefruit, slight wood with pepper on the finish. Light. My first Jabali and up there with the most pleasant mezcals I’ve tried so far. Solid.

My first jabali and it didn’t disappoint. Unlike any other mezcal I’ve tried – finely focused fruit, floral, sweet and sour finish. Great to have among other mezcals, but not my “go to” for the entire evening.

We were cautious about the cost, but once we got this baby home we were very pleased with the flavor, the smoothness, and the complexity. I loved how much the smoke comes through, but more importantly I loved the subtle hints of other indescribable flavors it presented. We had a party and everyone ended up sipping this mezcal and abandoning their wine. At one point someone used this in a margarita with mix, but we were able to safely escort them from the party unscathed.

lighter and greener than the other jabalis i’ve tried. very nice, but i’m all about the rey campero jabali. that one negates the existence of the DM for me.

My first JabaIi agave Mezcal.
I found the nose to be quite potent, flowery perfume and citrus. I struggled to identify key flavours, maybe as it was among other drinks, however, Grassiness that reminded me of wormwood, roots and sweet leather, a little numbing. A light creamy finish with a long lasting spicy sherbet sourness that sticks to the tongue.
I’ll try more jabali to see how this compares and look to try this again with a re-edit.

A great release from Del Maguey. This jabali is lighter than others I’ve tried. The initial flavors remind me of the Del Maguey Tepextate (perhaps the same mezcalero?). There are notes of black olive, melon, clove, and it finishes with a zesty wood spice. It’s thin on the palate and leaves a soft tingling sensation in your mouth. It doesn’t impress me as much as the El Jolgorio jabali but this is an impressive spirit nonetheless. Lot JAB-161
