About this mezcal

Dixeebe Cuishe is produced by Valentin Cortes in Santiago Matatlan, Oaxaca. The maguey Cuishe (agave Karwinskii) used in this mezcal are cooked in an underground pit oven, milled by tahona, and double distilled in a copper still. The initial release of this was just 80 bottles.

Dixeebe Mezcal

Dixeebe Mezcal (pronounced "dee-sh-bay") is a project from Asis Cortes and his father, Valentin Cortes. Their family has been producing mezcal in the Santiago Matatlan region for at least 180 years. The two of them are perhaps most well-known in Mexico and internationally for their previous work with Mezcal El Jolgorio and Nuestra Soledad. Asis and Valentin have now moved on from these two Casa Cortes brands and will be focusing on Dixeebe, along with Asis' brand in Durango, Origen Raiz. Asis and his father decided to launch Dixeebe as a way to reconnect with their past and support their traditions in the future.

According to the Asis, Dixeebe is a ceremony of honor of respect and love, the purest thanks to culture, thier tradition and their ancestors, a great veneration of liquid, a gift from the gods to men, and an offering from men to the gods. Nose – Vegetal, jalapeño/green pepper-ish like a Tepeztate.

Palate – Vegetal again. Floral aspect of a karwinski intertwined. White pepper. More floral notes in the finish. Great stuff!

Tasted alongside the Dixeebe lineup at Puro Burro and what a beautiful expression. Soft, floral, summer fruit, and somehow gave me a cooling mouthfeel. Maybe the last part was because I was at the end of a long tasting but this one was memorable and worth a shot should you get the opportunity. Haven’t seen bottles in the US just yet 🙁

This is a light, tropical Cuishe, the karwinski type. I get tasty notes of strawberries and bananas. Definitely worth a try. I’ve been really impressed with everything I’ve tried from Diexbee.

Batch 2. Stunningly beautiful Mezcal! Delicate and soft and light and fresh. This reminded me of being on an empty beach with a cool breeze walking across crushed oyster shells. I absolutely love this one.
