About this destilado de agave

Caballito Cerrero Chato Reposado is made with maguey Chato, which in this case is referring to an agave Angustifolia, which is either related-to or synonymous with maguey Espadin. The agave are cooked in a brick steam oven, milled in a double pass mill, fermented for 7 days in open stainless steel tanks with both wild and proprietary yeast, and distilled in stainless steel and copper. It is aged for 9 months in American Oak.

Caballito Cerrero is a Tequila company founded in 1950 by Don Alfonso Jimenez Rosales. It is considered one of the top Tequila distilleries in the world. They’re committed to producing Tequila the traditional way and that sometimes means they butt heads with the Consejo Regulador del Tequila (CRT). For this reason, they label their traditionally produced Tequilas as Destilado de Agave.

Aroma – Cooked Agave, slight notes of Carmel and butterscotch, minerals, wet stone, subtle oak notes, cinnamon and baking spices.

Flavor – creamy mouthfeel with notes of cooked agave, oak, unripe banana, cinnamon, black pepper and a slight peanut note on the finish. The finish was medium long and enjoyable.

This is a treat, well rounded reposado that keeps the agave as the star of the show while incorporating the best parts of the barrel. I was impressed with the finish for a 40% abv product. I think it’s important to note that this product is more similar to tequila in terms of production and flavor profile and my review has that in mind.

We got this bottle at the distillery in December 2019. If you get a chance to visit the distillery you should do so. It is an incredible journey and the distillery is old and beautiful. Don Rosario gave us a tour and a tasting.
The color is light straw, considering it has been in barrels for 9 months, very light. Oily in the glass with long lasting legs/tears.
Aroma is wonderful with strong agave, butter and pepper. Lots of character.
Taste is full of agave with some buttery sweetness, a bit more interesting than tequilana weber (el azul), hints of nuts and citrus.
Finish has pepper, some warm and dark sweetness, and last medium-long–very pleasant. Smooth and refined but still having some bold character.
Overall: this is a mezcal (but not in name due to the rebel nature of this company) made with the tequila process–most notably without smoke, they use steam ovens. As a “tequila” I rate it 4/5. As a “mezcal” its 3/5. Please keep breaking the rules! Great stuff.
