About this destilado de agave

Caballito Cerrero Chato is made with maguey Chato, which in this case is referring to an Agave angustifolia, which is either related-to or synonymous with maguey Espadin. The agave are cooked in a brick steam oven, milled in a double pass mill, fermented in open stainless steel tanks with both wild and proprietary yeast, and distilled in stainless steel and copper.

Caballito Cerrero is a Tequila company founded in 1950 by Don Alfonso Jimenez Rosales. It is considered one of the top Tequila distilleries in the world. They’re committed to producing Tequila the traditional way and that sometimes means they butt heads with the Consejo Regulador del Tequila (CRT). For this reason, they label their traditionally produced Tequilas as Destilado de Agave.

Aloe, sweet lavender soap, dried woodruff and a hint of smoke on the nose,
Loads of white pepper on the palate at first, with cooked agave and clove — very much a tequila profile at first. Finish has more of the aloe and coumarin/woodruff. Light in structure but pleasant. Absolutely worth a try. Couldn’t see any batch info on the bottle

Tequila notes on the nose. There is a bit of anise, minerals, cotton candy, and citrus rinds. It’s light and fresh and reminds me of a quality blanco tequila. I’d rate it higher if the price was a little better. Not sure of the lot but “3-980” was written in marker on the back label.

Sweet and sharp, citrusy and minerally. Milk chocolate, tropical fruits and grass. I like this one a lot, even though it might not have the complexity of the best mezcals.

Only had a short tasting, but good sweetness up front, control of proof, and a grassy herbaceous finish. The development is nice, though it lacks some balance.

Not really mezcal based on its production method, but extremely different and interesting. Strange flavors of bubblegum up front, followed by cotton candy and a non existent finish. 3.5/5
