El Destilado Bicuixe – Madrecuixe is made by Atenogenes Garcia in San Isidro, Oaxaca. The agave are cooked in an underground oven with Encino, Huamucil, and Mesquite. They are mashed by tahona and fermented with well water and open air yeasts before being double distilled in copper.

El Destilado

While some of the El Destilado brand’s agave distillates are sourced from some of the same producers as the 5 Sentidos brand, the El Destilado spirits brand is otherwise not directly related to the El Destilado restaurant in Oaxaca City. The brand was founded by Michael Sager and Marcis Dzelzainis, who own the Sager + Wilde Restaurant and Wine Bar in London.

Batch 400; April 2014
Very clean, smooth and drinkable. Really soft on the palate.
Mineral, pine, grass on the nose.
Another complex one for me but maybe I’m just not great at packaging yet 🙂
Fruit and floral, light sweetness and mineral in taste. Very pleasant finish.
I’ve revisited this bottle a few times prior to this review and it keeps growing on me. 4 stars for now but it might prove to be a bit harsh.
