About this destilado de agave

Gusto Historico Tobala y Bicuixe is produced by maestro mezcalero Eusebio Santos in Miahuatlan, Oaxaca. This was made with 50% Tobala and 50% Bicuixe. The agaves are cooked in an underground oven, milled by tahona, fermented with open air yeasts, and double distilled in a copper alembique still.

Gusto Histórico specializes in bringing unique destilados de agave y mezcales tradicionales to the market. The brand was started by one of the co-founders of famed Oaxacan mezcaleria Mezcaloteca, and the Gusto Histórico brand features many of the same producers, with a focus on preserving traditional production methods and practices.

Texas-only release iirc. Spearmint gum and fruity mike and ikes. Not in offensive in the least. Enjoyable but didnt wow me. Still, I think ill buy a bottle next time I see one to revisit.

What an incredible mezcal from a producer unknown to me until now. Wowza. What a great combo of agaves! Bicuixe always creates interesting flavors and this 50/50 ensamble is a has it all. The warm Karwinskii dry spice along with the sweet candy Tobala. The first time I tried it, my reaction was: it’s an instant 5-star mezcal. This time around my palate is a bit different (maybe off?) and while great, it is not other-worldly like before. I’ll revisit this again soon. 60 liters, 47% (according to the sample dram I have). 4 stars.

Ok, I’m trying this a week later (6 Oct 2021) and it is back to the original incredible flavors I experienced the first time around. The minerality is so pure. You also get a bit of pine from the karwinskii or the fermentation in wood vats. My experience is more Bicuixe-heavy this time. Can’t wait to try more from this mezcalero. Updating to 4.5 stars.

The nose on this keeps evolving the longer it sits in glass. Initially I got primarily sugary and fruity aromas of bubblegum, cane sugar, cherries, watermelon, and kiwi. The longer this sits, however, the more I get mustard seeds, Worcester sauce, and hints of smoked meat. The palate is delicate and semi-viscous, with notes of smoked pineapple, charred mango, lavender, sage, and a bit of pepper. This is phenomenal. I was gifted a dram of this, but would be eager to find a whole bottle.
