About this sotol

Hacienda de Chihuahua Sotol Premium is made from 100% wild-harvested Dasylirion plants in the Chihuahuan Desert of Northern Mexico. Master distiller José Daumas Gil de Partearroyo oversees the state of the art production process which starts by slowly cooking the plants in steam-heated ovens, natural fermentation with champagne yeast, and then distilling three times in a double-column copper still. The plants that show the highest levels of quality regarding size and maturity are hand-picked for use in Hacienda de Chihuahua Platinum.

Hacienda de Chihuahua Sotol

Hacienda de Chihuahua Sotol is operated by Vinomex and the distillery is located in Delicias, Chihuahua, Mexico. The distillery originally produced brandy under the guidance of its master distiller but later switched to sotol. To guarantee the continued availability of sotol, Vinomex has initiated an extensive conservation program which ensures the preservation of the Dasylirion plant for future generations. Sotol Hacienda de Chihuahua is USDA organic certified and Kosher certified. The company slogan is “Like Tequila? Love Sotol”.

Adequate, complex production.
Average length and fine character.
?-warming, coating and astringent effect;, sufficient smooth alcohol; medium body.
Primarily sweet taste with light bitterness; buttery smoothness.
Flavors of honeyed apricot, under ripe quince, pear, melon, peach, lemon, lime zest, soft cotton, linden, fresh laundry, and peppercorn.
Medium concentration flavor intensity, complex, harmonious balance.
Straightforwardly pleasant and very long finish.
Very good to excellent impression.

Nose: Black licorice. Nail polisher remover.

Palate: Dandelion (yes, I ate one as a kid, that taste memory never fades). A very medicinal sweetness to it. Thin mouth feel. The 38% ABV is extremely watery at first but becomes more honest in the middle to the finish. Aftertaste is bitter chocolate, anise and a touch of black pepper.

Big miss for me – this is like a cough medicine infused spirit.
