Luneta Verde / Chino from the Navarro family is produced in the state of San Luis Potosi, Mexico. The Navarro family has been utilizing a unique clay pot still (campanilla) and other ancestral techniques for at least 4 generations. They are one of the last families in this region to maintain this 400+ year tradition. The brothers, Daniel and Jesus Navarro, gather wild Verde and Chino (Salmiana agave) from the desert hills of San Luis Potosi. They roast their agave hearts in an above ground earthen oven with mezotes (dry agave leaves & roots), dried palms, dry nopal cactus and volcanic rock. The roast typically takes 3 days. The cooked agave is then smashed with a horse-drawn tahona. The Navarros then deploy a large woven hammock to squeeze out the sweet juices from the roasted and smashed agave. Instead of fermenting with water, they ferment with pulque to help stimulate the wild yeast fermentation. The fermented liquid is then distilled in clay pots, yielding an average of just 90 liters per month.

Fresh and green. Maybe its the name “verde” inserting itself into my brain. Olives and bell peppers. Finish is slightly briney. Overall, like a mexican martini, this thing just works

Nose – Incredibly fresh, halved jalapenos. Sugar in the Raw. A wet salamander (I caught them a lot as a kid). Light parmesan cheese. Some clay. Man, this nose is exceptional!

Palate – The promise from the nose delivers, big time! I’m getting a fresh jalapeno flesh note as well as a roasted, candied jalapeno. This is magic with the clay. A perfect amount of heat and smoke really rounds this out. This is one of the best San Luis Potosi mezcals I’ve had, so awesome!
