About this mezcal

Mezcalosfera Maguey Tobasiche is made by Maestro Mezcalero Emanuel Ramos in Miahuatlan, Oaxaca. The agave were cooked in an underground pit oven, fermented with wild yeasts for six days, and double distilled in a copper refrescadera still. This batch was produced in July 2017, and the batch size was just 390 liters.

Mezcalosfera de Mezcaloteca is the exported bottling from Mezcaloteca, the famous bar in Oaxaca City that is renowned for their educational tastings. They source all of their agave spirits directly from producers in seldom-traveled parts of Oaxaca that are often hard to get to. They put an exceptional amount of information on their labels, and all of their releases are very small batches that exhibit the most unique characteristics of mezcal. Though only a few batches have been brought into the US, there are dozens upon dozens of different varieties available for sale at their tasting room in Oaxaca City. Most of their spirits are labeled “Aguardiente de Agave”, however all of their limited exports are certified “Mezcal”. These mezcals are imported into the United States by Heavy Metl Premium Imports, which also imports popular brands Mezcal Real Minero and Rey Campero Mezcal.

Tobasiche is probably my single favorite maguey, and like many of my favorites this mezcal brings that “well balanced salad” flavor profile to bear: the savory corn and vegetables combined with the vegetal/herbal leaves, sweet onion, and blueberry. Delicious.

Delicious! Wasn’t blown away the first time I tried a friend’s fresh bottle but after trying this again after it opened up (1/3 left), the flavors really came together. Lots of fresh spice and newly cut herbs on the palate. Definitely some clove here along with notes of incense. A bit of Dr. Pepper and lime. Overall big and spicy sweet like those hot peppermint candies. This mezcalero, Emanuel Ramos, is very talented.

I’ve changed my score on this bottle 3 times and it keeps going up. I get a bunch of lavender on this. It has a chalky, limestone backing. Leather on the nose. A beautiful Tobasiche! I’ve enjoyed all of Emmanuel Ramos’ releases.

Sweet woody aromas of sugar cane, hickory smoked bacon, and sandalwood. The palate is super soft and confidently balanced. Notes of lavender, boiled lemons, clove, Butterfingers, caramel, a bit of rosemary, and strawberry fruit leather. There’s some heat throughout but it never takes control, staying as warmth in the background.

Splendid. Harkens back to Real Minero Largo. Slight spice and sweetness up front, with a smooth mango finish. Notes of hay and green apple as well

Sharp tobasiche, lots of yam-like starches, but with brown sugars and more sweet potato on the finish. The palate is very in control, mild florality – dried rose, ancho, dried poblano, fresher leather, spent coffee grounds, tobacco leaf, clove, a pinch of star anise, cooked lemon. Rosemary or juniper style vegetal heat. Proof is in control on entry though the warmth shows on a quite long finish. I really like this agave, and this is a fun example.
