About this mezcal

Noble Coyote Espadin is made with cultivated agave Espadin. The cooked agave are milled by hand with mallets, and it’s double distilled in copper alembic stills. Green aromas dominate, followed by anise and subtle smoky notes. Bright green herbal flavors continue on the palate, into a medium-long finish.

Noble Coyote Mezcal

The coyote has played a fundamental role in mythology. Even today in Oaxaca, it is common to hear farmers tell stories about coyotes that reach supernatural proportions. Every bottle of Mezcal Noble Coyote identifies the Maestro Mezcalero that made the mezcal, the village in which it was made, the type of agave used, and the lot and bottle number. In addition, the Maestro Mezcaleros personally sign the labels as a guarantee of their commitment to the authenticity of their ancient craft. Noble Coyote is concerned with the sustainability of mezcal and is proactively involved in ensuring its future. Among other things, they have created and maintain a seed bank for wild agave. They also cultivate species and varieties of wild agave and devote considerable effort to reforesting the land with wild agave.

Mezcalero: Edilberto Bautista
I am pleasantly surprised by this mezcal. My expectation of the Noble Coyote espadin was leaning toward typical espadin notes: smokey and citrus.

On the nose, I got oats, cinnamon, and a chalky chocolate scent. On the palette, I tasted dark chocolate, coffee, and spice.

Budget Espadin that has everything you look for in a cheaper bottle and I prefer it to Del Maguey Vida if given the choice. Strong ABV that will hold up in a cocktail and provides the caramelized/smoke profile you need for drinks with syrups/juices. Not what I’d want to sit and sip and savor but I see this working perfectly for anyone looking to stay under the $40 threshold for Mezcal.
