About this mezcal

Noble Coyote Jabali is made with wild maguey Jabali (agave Convalis) that takes 12 years to reach maturity. The cooked agave are milled by hand with mallets, and it’s double distilled in copper alembic stills. This mezcal has aromas of lemongrass, dried anise, eucalyptus, bacon fat, and herbs. The palate follows with slate, dried mint leaf, oriental spices, and high mineral notes.

Noble Coyote Mezcal

The coyote has played a fundamental role in mythology. Even today in Oaxaca, it is common to hear farmers tell stories about coyotes that reach supernatural proportions. Every bottle of Mezcal Noble Coyote identifies the Maestro Mezcalero that made the mezcal, the village in which it was made, the type of agave used, and the lot and bottle number. In addition, the Maestro Mezcaleros personally sign the labels as a guarantee of their commitment to the authenticity of their ancient craft. Noble Coyote is concerned with the sustainability of mezcal and is proactively involved in ensuring its future. Among other things, they have created and maintain a seed bank for wild agave. They also cultivate species and varieties of wild agave and devote considerable effort to reforesting the land with wild agave.

Agave Jabali mezcals seem to be hit-or-miss these days. El Jolgorio and Rey Campero set a high bar. This agave Jabali mezcal has some nice fruity and green notes but not that spicy sweet root beer kick in the teeth that I’ve grown to enjoy with other agave Jabali mezcals. It is on the smoky side. My girlfriend said it smelled like cigarettes. I’ve enjoyed some of the mezcals from Noble Coyote but this isn’t one I’d need to revisit.

My favorite mezcal at the momet by far. Amazingly floral and easy to sip, smells like muddled roses.
