About this mezcal

Paquera Espadin is made with cultivated agave Espadin in Ejutla, Oaxaca. This mezcal was curated for it’s use in cocktails but it’s also good neat. The agave used in this mezcal are cooked in an underground pit oven, mashed by horse-drawn tahona, fermented in oak vats, and double distilled in a copper still.

Created from a methodology perfected over generations of dedicated family artisans, their love for Mezcal has only deepened upon being exposed to its unique production process and rich culture.

Paquera’s mission and purpose is to contribute resources to the union de productores agropecuarios del distrito de Ejutla de crespo (UPADEC) which is a coalition of local palenques that work together to sustain and grow their micro-enterprises. This artisanal spirit is beloved by many and the brand is driven to honor its cultural importance in every bottle. The company strives to continue the history of appreciation and respect for the most precious spirit of all – Mezcal.

Lot PES7001 42.5% Sampled on 3/20/2024 Aroma’s out of the bottle are pretty mute.Maybe a little cinnamon mixed in with alcohol. The flavor is very nice.Cinnamon rubarb ocean slate and some brown sweetness. For the price, this is really good.I’ve been disappointed by a lot of espadins of late. No this one!

Solid albeit forgettable budget Espadin. Reminds me of the lighter/lower ABV varieties but at 45% and with a reasonable bottle cost I give this a passing grade. Nothing lingering or notable taste-wise but worth having this in a cocktail.

Initially I told the Paquera owner that I would rate it after I was halfway through the 2nd bottle. Well, I now feel obliged to do it after starting the 2nd bottle. Weeks ago I mixed 1/5 or 1/6 shot of the 100% Espadin with the Lakewood Organic prune juice the GTM Discount Store was full of at a fraction of the original price. To my surprise the juice flavor improved over 30%. Last week I poured the same petty amount into the Vital Proteins’ organic chicken bone broth powder mixed in water that comes nowhere near boiling barely passing 100°. Then I was blindsided by the 30+% improvement with something completely different. Like it was with the prune juice the flavor was more balanced ABSENT of mezcal flavor. At this point the raving review about the BEST mixer I came across is overdue.

By itself I tasted a balanced medium spicy + slightly bitter flavor. At the Mezcalistas’ tasting I frowned on every one that had any bitterness. However this one’s combined with spice is pleasantly balanced. Previously some have described the texture as “buttery”. Personally, I feel SILKY or VELVETY is more dead-on. Butter is unpleasantly clumpy. Paquera 100% Espadin is pleasantly SMOOTH.

Yup, it made BOTH the organic unwanted prune juice AND refrigerated chicken bone broth SMOOTHER too. Before posting this I encouraged the Paquera owner to get in touch with a couple bomb chocolatiers to see if they can use the 100% Espadin.

First enjoyed this beautiful Espadin at Wally’s in Santa Monica and had to buy a bottle (or two). Can’t wait until it’s back in stock as it’s SOLD OUT! I definitely recommend this bottle to anyone who is looking to add to their at home bar. It’s my go-to for guests when they come over. The bottle and packaging looks fantastic as well. Great overall product. Well done Paquera.

Lot PAQEJ450118. With so many new brands bringing mezcal into the US over the last 6-12 months, it’s great to see/taste something new that’s from anywhere other than Santiago Matatlan. Not that I have anything against Matatlan, but it seems like everyone and their mother are opening shop there, so it’s refreshing to taste something like Paquera from Ejutla, a region that I generally prefer from a production standpoint. This Espadin is the best from a new brand that I’ve had in a while, especially at their current price point. This is a great deal. Rich aromas of brine, seaweed, and fresh rhubarb. The palate is balanced, full, and buttery. More notes of brininess and ocean breeze on the palate. Very pleasant.
