About this mezcal

Pluma Negra Tobala is made with wild maguey Tobala that are harvested in the semi-tropical mountain climate of San Juan del Rio, Oaxaca. The agave are cooked in an underground oven, milled by a horse-drawn tahona, fermented in open-air pine vats using naturally occurring yeasts, and double distilled in a copper pot still. This mezcal has delicate aromas of chocolate, plums, and a slight touch of tobacco. It tastes of sweet pineapple, mango, and a light tone of peppermint and cinnamon.

Pluma Negra Mezcal

Mezcal Pluma Negra is made in the town of San Juan del Rio, which is in the state of Oaxaca, Mexico. It is made with wild agaves rich in the flavors of their 100% organic land, and is produced by the hands of a Maestro Mezcalero who uses the process learned by his ancestors. They’re goal is “to be a worthy ambassador of Mezcal, for those who deserve to feel the culture of Oaxaca in all its splendor.”

48% Aroma out of the bottle is thick sweet alcohol scented with some tropical fruit. Mouthfeel is so smooth with some tobacco pouch and again papaya mango pineapple. Very easy to drink finishes clean.

LOT: 004-TBL
Nose – Subtle sweet tropical aromas. Honeycomb. Slightly starchy (baby red potato). Very clean.

Palate – Dried papaya. Dried apricot. Heat is a tad light for 48% ABV. Sprite soda and baked green apple in the long, tasty finish. This is a crushable mezcal. Dangerously good!

This was my favorite of all the Pluma Negra expressions I tasted. Cardamon, pickled herring, mint, bee pollen and dragon fruit on the nose. On the flavor profile I get rock fruit, chives and artesanal chocolate. Super enjoyable. I will be keeping a bottle of this around .

Lot 002-TOB. Clean nose, with aromas of rosemary, sage, grilled potatoes, apricot, and dried tobacco. The palate has notes of green apple, pineapple, mango, red Jolly Ranchers, leather, and a dash of oregano. This is really nice and easily enjoyable.

An enjoyable Tobala with tons of green notes. I tasted a few different Tobalas tonight and this stands on its own. There is a pepperiness here as if these agaves were planted near Maguey Tepeztate or peppercorns. Little bit of clove and some cilantro. For me, Tobalas offer up a wide variety of flavors that aren’t necessarily as consistent as other types of agave. This is leaning more towards dark vegetal and spicy versus fruity. I’m enjoying it. 48%, lot 002-TOB.
