About this destilado de agave

Rayo Seco Sacatoro is made with wild harvested maguey Sacatoro (Agave angustifolia rubescens) in Atenango del Rio, Guerrero. The Sacatoro is a rare maguey that is micro endemic to the northern Guerrero state. Maestro Vinatero Israel Petronilo roasts the agave in a conical earthen oven, mashes the cooked agave by hand with an axe and wooden mallet, ferments the agave with wild yeasts in spring water, and double distills in a copper alembic still.

Rayo Seco Destilados is a brand featuring some of the finest producers in Guerrero, Mexico and beyond. They represent over five generations and they provide an introduction to the traditions of Guerrero to consumers across the globe. As of 2021, the state of Guerrero was still relatively untouched by many importers due to the decades-long unrest throughout much of the state. This is beginning to change as brands like Rayo Seco are at the forefront of exporting craft spirits from the region. Rayo Seco is also working with producers in other regions of Mexico.

Lot 202107, 52% abv

Nose: Pine bark, soil, old book pages,

Palate: Tootsie roll, light chocolate, caramelized fruits I see the peaches others mention, candied walnut, cedar plank. Finish is plums, figs, sage, basil, burnt banana, cherry, and soil.

Unique and tasty stuff! I love how well it combines earth and the fruitiness.

Review #19: Tons of fresh peach, apricot, fresh sweet thai basil, rosemary, toasted herbs, light milk chocolate, a little bell pepper, and earthiness. I really love the fruits on this one mixed in with the darker earthy notes. Great showcase of angustifolia here

nose: quite earthy, white nectarines, parsley, turnips, harissa, ancho chilies, creamy rosemary, white pepper, graham crackers

palate: green grapes, honeydew, creamy, arugula, kale, chocolate malt on the finish,

this smells lovely. very wet, silky mouthfeel. this is really quite good. some clay vibes. really tasty. 8/10

Familiar earthy, wet gravel-like nose. Lots of heavy minerality scents. It is sweet, but in a leafy and floral kind of way. Aloe vera, medicinal. Floral citrus blossoms. Cherry wood, cedar lumber and sawdust. Roasted agave. Plantains. Root vegetables – sweet potato and carrots. Allspice dram with a demerara raw sugar flavor. Oyster sauce. Lastly, a sweet and sour vinegar, Kansas City BBQ sauce flavor.

At first sip, you get this really foreign tropical fruit flavor. Fresh apricots. Mineral water and a slight aluminum or cast iron metallic taste. Citrus leaning sweetness with more bitter pithy flavors. Juicy Fruit aluminum gum wrapper.

There’s a really bold clove cigarette flavor on the finish with that minerality maintaining throughout. Slight salinity. Lime peel and leaf. Very clean flavors if a bit dry. The citrus note nags at your palate with a bitter lemon tea flavor.

This is an equally delicious batch from Israel. I however give the Maguey Melate batch just a slight edge as I preferred the briny sourness vs the more vegetal and tobacco finish of the Rayo Seco.

It has a drying effect on your mouth. The alcohol is well balanced right before the edge of being overpowering. Notes of orange gummies, peach skin, old marshmallows, and bottled oregano. There is a dryer sheet element too. Super unique from a cool new brand (in 2021)!

Sipped the Zacatoro from the Barranca guys and Mal Bien last night. They are very different.. I’m curious if the Agave angustifolia species is different (or perhaps just a different region). They are both wild and interesting. This Rayo Seco was Lot 202105. Bottle 320/432.

Lot 202105. Bottle 320/432. Big aromas of green tea, fresh cotton, mango skin, dried basil, tomatoes, and bell peppers. The palate is rich with chalky minerals, mango, papaya, and red Twizzlers. There’s a candied stickiness on the palate texture that I like a lot. This is phenomenal.
