About this destilado de agave

Rezpiral Espadin Capon is made with agave Espadin that take 10-12 years to reach maturity. This mezcal is produced by maestro mezcalero Aureliano Hernandez. It has a rich honey flavor. The entire batch is just 135 liters.

2018, series #2: Seventeen different master-crafted spirits by five independent artisan producers from four pueblos San Agustin Amatengo, San Baltazar Guelevila, Chichicapam and San Luis Amatlan; spirits from eleven wild and cultivated varietals, and three specialty batches (pechuga de conejo, espadin capon, espadin con frutas).

2018, series #3: A curated collection of eleven agave spirits crafted from four independent artisan maestros collaborating with the project. Labels in this series are hand drawn as before, and individually silk-screened labels, some with multiple colors.

Rezpiral

Rezpiral brings selections of high-quality traditional small-batch (non-certified) Mezcals into a handful of places in the USA. At the core of the project is the embrace of an ethos that aims to respect and support the multi-generational knowledge, independence, flavors, lands, and ways of each mezcalero family.

Rezpiral’s small scale allows for the advocacy of diversity on different levels, from supporting the autonomy of producers & their continued production of artisanal mezcals to the preservation of local land control. Rezpiral actively supports master artisan’s proactive planting and management of agave; recollecting and incubating seeds, transplanting and farming diverse species of endemic agave in sustainable ways. Rezpiral directs 10% of earnings back into supporting artisans farming.

Rezpiral has a regional greenhouse to support independent small scale mezcaleros in cultivating and reforesting their lands with local endangered wild agave varietals. They also are highly focused on a cultural and conservation residency program.

Wonderfully sweet notes of manuka honey and burnt sugar. Nice after dinner mezcal.

Series 3

Nose: creme brulee, buttered popcorn, caramel, vanilla bean, and slightly green notes.
Flavor follows the nose with lots of big, round, sweet sugary notes with a touch of minerality and funk. A bit too sweet for my tastes but this is a very unique espadin and one of the better angustifolia expressions I have had.

Distilled 2017. In a comparative tasting of six different top-quality espadíns, this one was perhaps the winner. It’s spectacularly complex, with beautiful floral notes, minerality and agave sweetness working together to create an extremely well-balanced whole. Proof that a great espadín can compete with any mezcal.

This is a unique Mezcal that has a flavor profile all to its own and is one of the most interesting I’ve tried. If you see it definitely grab it, though it is hard to find and taste wise might not be for everyone. It is my understanding that an espadin capon means that the espadin was aged beyond the quijote flowering and the the quijote is chopped off? The end result being the pina is overripe when it is roasted, completely changing the flavor of the agave.

On the nose, this mezcal smells almost like a less astringent clairin or rhum agricole: sugary with a mild amount of funk to it. The way it hits your mouth is sticky, thick, and viscous. I get all sorts of odd sweet tastes including: caramelized butter, sweet pop corn, honey, cotton candy, and sugar cane. Bizarre and delightful, truly one of a kind. Without knowing beforehand, I wouldn’t have guessed this was made from espadin.
