About this mezcal

Salvadores Anejo is produced by Flavio Pérez Méndez and his family. This mezcal is traditionally produced in Tlacolula de Matamoros. The agaves are cooked in an underground pit oven, milled by tahona, fermented with open air yeasts, and double distilled in copper stills. After distillation, this mezcal was rested in wooden barrels.

Salvadores Mezcal is a brand from Tlacolula de Matamoros, Oaxaca. The brand is a family company that was founded when the current producer’s great-grandfather began making mezcal in the early 1900s. Through several generations of learning and knowledge-transfer, they constructed the Casa Palacios Destilería in 2019 and officially registered the Salvadores brand in 2020.

BATCH AXS-02, YEAR 2021, 42%, BOTTLE 77

Nose – Musty and sweet; old wood, damp attic, cinnamon rolls, caramels, and shoe polish.

Palate – Very confectionary; baked goods. Tiramisu, butterscotch, dulce de leche. And a funky, woody component from the barrels is in there as well; oak, cashews, menma (bamboo garnish in ramen).

Finish – Sweet and buttery; buttermilk donuts, caramels. With some faint and subdued wood; shiitake mushrooms.

Good and flavorful. It’s uncommon to find a respectable Mezcal that wants to have fun with itself and offer a barrel aged spirit. Well done for what it is!

Nose – Great balance between the espadin flavors and the barrel notes.

Palate – One of the better anejo mezcal expressions that I’ve tried. The barrel notes are in sync with the roasted agave flavors. I dig it!
