About this mezcal

Siete Misterios Pechuga is a rare release, and does not come from the Sola de Vega region like most of their other mezcal. This mezcal is made in small batches in Santiago Matatlan. It is hand-milled, and triple-distilled in a copper still. Before the third distillation, fruit and spices are added to the blend. A raw chicken breast is also suspended in the still and all of the vapor passes over the chicken before it is transferred into the final holding vessel. They produce less than 500 litres of this per year, so make sure to try it if you see it.

Siete Misterios Mezcal

Siete Misterios was founded in 2010 by brothers Julio and Eduardo Mestre with the intent of keeping traditional mezcal production at the forefront of the mezcal industry. The company sources a wide range of mezcals that all highlight a single agave varietal. They are backed by those who are deeply saddened by the industrialization seen in most tequila and some low-grade mezcal, and they’re doing everything in their power to keep the art of the mezcalero alive. The mezcaleros making their bottles change batch to batch, so one batch’s bottles may taste entirely different from the next batch’s bottles. This gives Siete Misterios a lot of variety in it’s bottling as each batch is made by a different person, with agave grown in a slightly different micro-climate, and the mezcal may hold a slightly different ABV. In 2021, the Mestre brothers formed a partnership with Chatham Imports with Chatham becoming the exclusive global sales and marketing agent for Los Siete Misterios, excluding Mexico.

Triple distilled which i think is more common with Pechugas. Their strongest in the lineup that i tried, a close second behind the Mexicano.

First pechuga that I try. I expected more complexity. It’s a clean taste Espadin and I got roasted pechuga as a lingering aftertaste. But, is it really what you look for in a mezcal? there are much better mezcal out there, with greater complexity and body than this one, and they cost less.

Was excited to try this one and wasn’t disappointed. There were a lot of unique notes form the pechuga spices. Apple skins, lots of fruit, mashed mango. Not a lot of meat detected but very enjoyable. This was copper distilled in Santiago Matalan by Don Mario Lopez in 2016 at 48% ABV. Batch of 497 bottles total.

Siete Misterios Joven Mezcal Pechuga 2014 / 94 proof / $145

Tahona milled, copper still. Slight sweetness and fruit from fruits/nuts used in the 3rd distillation. Moderate smoke / agave. Can’t really identify an impact from the turkey breast. I don’t have a basis for comparison yet, as this was my first (and only) Pechuga – but I totally enjoyed this.

The only issue is that due to the price this will be a rare purchase. I hope I can find a less expensive Pechuga that I enjoy as much as this one.
