About this sotol

Sotol La Higuera Cedrosanum is produced in Aldama, Chihuahua by Master Sotolero Gerardo Ruelas. The sotol plants are cooked in an outdoor conical oven and then milled by hand with axes. The fibers are naturally fermented with wild yeasts in 1,000-liter pine vats before being double distilled in copper alembic stills. The Cedrosanum has mineral and caramel notes on the nose. Smoked grass and cedar on the palate. The finish is dry and the texture is balanced.

La Higuera Sotol

Sotol La Higuera is produced using traditional methods in Aldama, Chihuahua by Master Sotolero Gerardo Ruelas. He cooks the different varieties in an outdoor conical oven fired by wood and rocks. The Dasylirion varieties are milled by hand with axes. Fermentation occurs with wild yeast in 1,000-liter pine vats. The sotols are double distilled in copper alembic stills.

Lot 21, 03/22 production date

Review #63: nose is full of caramel, coconut, buttered popcorn, hershey milk chocolate and butyric acid. All of the caramel, buttered popcorn, hershey chocolate, and butyric acid show up with some type of wood, earthy, maybe a touch of melon i got one time, and light smoke and minerals on the finish

I had to try this multiple times because everyone has great reviews. This is not it for me. The butyric acid is overpowering for me, and while i can get other notes from it, it’s honestly slightly gross. It reminds me of really old and bad chocolate. I hope i can find another batch to maybe redeem this, but for this batch I would not buy this again.

Nose – Light aroma of raw cherries. Very subtle nose.

Palate – Level of sweetness is like sprinkling some sugar crystals on your tongue. A bit of leathery ruggedness to it. Light to medium viscosity. Gets a tad hot in the middle then dips down again. A slight numbing effect in the aftertaste. Overall, nice balance and straight down the middle flavor intensity (albeit some heat). Solid stuff.

This was a 1.5 oz. sample from distinguished mezcal reviewer and puntas smasher, Rahkal (Lot 2).

This bottle was my first sotol and quickly became my weekday jam. Cedar wood, asparagus, and capers. I read a review where someone said it was like a brand new wallet and that is spot on! I will always make sure to have one of these on hand.

You’ve been driving for 4 days into the desert and it’s been a while since you’ve had a bath. The campfire was set up early and the sun is setting over the horizon. This Sotol tastes like that moment, where you’re watching the hot sun go down on a 100 degree day, and your pants and boots have the smell of sweat, denim and leather. You’ve got that fire going, made from underbrush and whatever you could clear. The smoke is permeating everything like it has for the past 3 nights. 

This may be a favourite of mine. The smokiness is intense on the nose and it continues from the first taste through the long tail. I’m also a fan of Islay single malts and smokey and earthy wines like Carmenere or Bordeaux from Sainte Emilion and Pomerol. This fits right in with those flavor profiles.

Drying nasal impact. Aroma is predominantly mineral and fresh cut pine. A bit of caramel-like softness rounds out the nose.
Buttery coating on the tongue and mostly sour upfront. The flavor leans strongly to a minty licorice and pine. Stone fruit is found after the initial heat is tamed and becomes more noticeable on the retro nasal. Overall impression: Think of a pine forest after a heavy rain. Another really nice sotol from La Higuera and worthy of a spot on your shelf. Solid, but not extraordinary

Smells of orris root and mint, reminiscent of an Italian Strega liqueur. Nice blend of fruit and wood but not very complex. Very “correct” and nice. Good craftsmanship and good flavours, although not very memorable.

Flavors of pine, raw cedar, sotol heart, smoked leather, peach, apricot, tangy tangerine.
Medium concentrated flavor intensity, slightly complex, correct balance.
Straightforward and very long finish.
Very good to Excellent impression.

Lot 8 bottle 422/800. Good earth flavors and aromas with limited alcohol odder. Surprisingly harsh finish that precludes it from being a good sipper. Overall disappointing as I purchased the bottle to expand my collection of sippers.

Aroma of damp pine forest floor, dandelion greens, and clay. Complex in the mouth with a range of tastes that transform as tine passes. Flavors of smoldering hardwood and terra cotta give way to casaba melon and white tea leaves. Medium bodied. Very enjoyable.

Strong vegetal aroma with notes of sage. Intensely vegetal and mineral on the palate, which smooths our into dry grass. Minerality sticks around through the finish, along with notes of smoky grass and a bit of heat. Can’t find any hint of the sweetness mentioned in other reviews, overall I found this to be a rough, dry drink. It’s the only sotol I’ve had so far, so I suppose you could say it’s my favorite at this point. I definitely wouldn’t hesitate to buy this again.

La Higuera makes some of my favorite Sotols. Cedrosanum is one of the smoother varieties, with a similar mineral, earthy, and herbal character as the others plus a slight winter/fall spice character and a dash of pillow mint.

Lot 2. Medium smoke on the nose. A hint of alcohol aroma that is very faint. The palate is a bit astringent. A bit hot as well. notes of sage, white pepper, lemon oils.

Lot 2. Delicate and dry. Citrus up front, with minerals and a little nuttiness. Lemon peel with pith. Graphite, walnut, and raspberry. Not as complex as the wheeleri but still nice and interesting.

Tasted side by side with the other 2 varietal offerings.
Quiet, gentle, dry, shows the character of the maker. Some sage is coming through rather nicely, along with white pepper and some small red dry forest berries – almost raspberry, or less sweet like a strawberry. Some touches of fresh leather with a touch of nice fresh polish; a new wallet. Some nice fresh lemon oil, and something that almost somehow reminds me of a light sherry. I’m digging this, just wish the aromatics jumped a bit more. Traces of mineral smoke. Pecan, and yes, cedar. My favorite of the 3.
