About this sotol

Sotol Onó is made with Dasylirion Cedrosanum, which takes 12 to 15 years to reach maturity in the wild. The sotol are pulled out of the earth with axes, and the spiny leaves are cut from the piñas to transport to the Vinata. Once in the Vinata, Maestro Gerardo Ruelas roasts the piñas for about 3 days, then grinds them by hand using axes and knives. The plants then ferment for 5 and 7 days, depending on the weather, before being distilled.

Ono Sotol

Sotol Ono is made from 100 % Dasylirion Cedrosanum. It is handcrafted in Aldama, Chihuahua by Gerardo Ruelas who is a third generation Maestro Sotolero, a central part of a family that has produced Sotol in the state of Chihuahua for generations.

Bought it for the price point, $38. Lime [peel], minerals, fig, heat, green walnut. Reserved, smells like the maker though. On the palate it’s classic enough, I’m guessing this brand is using wider cuts on the still or something to cut costs, there’s a decent heat to it for 45%. I’ll have fun using it in cocktails, just a little sharp for sipping.
