Series 3 – 2018:
Very delicious, very particular offering. Got some really wild notes on the nose immediately after opening: fermented jalapeño and cloves. The palette was deep, toasty pine nuts. Since it was so freshly bottled I let it sit a few weeks. Coming back to it now there’s more of a citric sweetness. Assuming this is the tobala coming out, balancing the tobaziche? Don’t necessarily prefer it this way as I’m a fan of earthy, fermenty flavors. Psyched to taste what continues to happen over time. Definitely grab if you can find it!
