About this destilado de agave

NETA Tepextate from mezcalero Gilberto Aquino Garcia was produced in Logoche, Miahuatlán. After harvesting, the agaves rest for three days before being cooked for 12 days in an underground conical oven. The cooked maguey is rested for four days before being milled with machetes and a shredder. The milled plants dry ferment for 48 hours before water is added and natural fermentation continues. Finally, it is double distilled in copper stills. The spirit is composed of heads, hearts, and tails.

For the May 2021 batch, he obtained 30 piñas of guía and capón Tepextate through his wife ́s family outside of the village of El Palmar, located to the northeast of Logoche. The May 2021 batch was selected by Astor Wines & Spirits for an exclusive release of 162 bottles.

TPXGLA2106 – Astor
This is interesting and hard to describe, reminds me somewhat of the Aniceto García Tep release though that is more complex. Spectacular nose of sweet lawn mower grass clippings, jasmine, winter green mint, lavender, and stone fruit (peach?). When taking a sip, it is an easy water-like drink until a slight hint of smoke on the finish. The flavors themselves have the grassiness recedes somewhat ceding to the jasminey, minty flavor, minerally flavor. There are also hints of overripe bell pepper, and perhaps a touch of fermentation. The flavor dies out relatively quickly into that slight hint of smoke, not a long finish at all. Kind of like an abrupt sentence.

Nose: Pecan pie. Pickled jalapeno. Fresh scallions. Cheesecake base.

Palate: Celery sticks. Breaded mozzarella. Chocolate chip cookie. A lasting peppermint heat in the finish. Ashy aftertaste. A lot going on here but it all just works. A great vegetal and sweet combination of flavors here, very nice!

nose: brown butter, peaches, graham cracker, peach cobbler, roasted pecans

palate: peach syrup, bell pepper, cinnamon, limestone, marzipan

this fella is real tasty but the nose is simply out of this world. 8-.
