About this destilado de agave

Lamata Verde was produced by Manuel y Pepe Simental in Nombre de Dios, Durango using Agave Salmiana (V. Ferox). The agaves are cooked in an underground oven and mashed by axe and desgarradora. It is fermented in pine wood vats with spring water. It is then double distilled in a traditional Durango-style copper on bottom wood “Viejo” on top with wood arm going to copper serpentine; the still can be seen in drawing on front label. This spirit is very green with notes of green-pepper and chile, flavors that are characteristic of Salmianas. This agave grows all over Mexico and is much shorter and smaller than it’s other Salmiana cousins. In this part of Durango it grows only on old, black lava fields known locally as “Breña”. Due to its relatively low sugar content, and very specific growing conditions, batches of Verde are small, and few and far between. Because of this, the company will only be offering limited amounts of this unique spirit, sporadically.

This bottle was originally released under the brand name Amormata; it was rebranded to Lamata prior to the release of the second batch.

Lamata (formerly named Amormata) is the for-export label of Nacion de Las Verdes Matas, a small unregistered brand started by Luis Loya many years ago. His goal is to share mezcal from Northern Mexico from places that are under-represented in the market. Luis has relationships with producers in Durango, Nuevo Leon, Sonora, Chihuahua, San Luis Potosi and Tamaulipas among others.

The typical lot sizes of Amormata releases range from about 40 liters to 200 liters. The producers will continue to make about the same amount of spirits that they historically have in the past. Therefore, the brand will not bottle much more than a total of three to five thousand liters per year. Amormata is dedicated to promoting the “gusto historico”, the terroir, the liquid culture, and the history that is mezcal to people beyond the borders of the places where it is made.

Peppers. Arbol and jalapeno mainly. Some tajin and bbq sauce. This is really good if you want deep, dark, mole-style flavors. Well made but not something I want in large quantities.

Nose: Brighter, more orange blossom, honey, minerals, orange orange orange. Fresh, clean, vibrant, cilantro as well. Orange Gatorade, tic-tacs, high quality soaps.

Palate: More proof, white pepper, fresh, clean, nice acidity lifts it all, mild cheese. Finish is long, very complex, bright – orange blossom and cucumber.

Thoughts: A personal favorite.

Lote: VERS-S 12-1-19
Nose: Chopped candied jalapeños (if there ever was such a delicious thing). Nose feel is wet and heavy.

Palate: Smooth. mint-infused heat – very nice mouth feel. Charred Anaheim peppers. Great lasting, warm and sugary aftertaste, like a spicy (chili pepper), candy cane.

Wild nose! Super complex. Smells like celery, fresh cracked black pepper, pepperoncini peppers, sea salt, vinegar, and chalky minerals. The palate is sweet and floral. Notes of artificial cherry and grape flavoring. A bit of chile and mango as well. Medium finish. Balanced throughout.
