The process begins with fully mature Maguey Espadin from the village of San Agustin Amatengo, Ejutla, Oaxaca. The plants are cooked in an underground pit, milled using a tahona pulled by two bulls, and fermented in wooden vats. This pechuga was distilled using a copper still with a refrescadera.
