About this mezcal

Mezcal Pistolero Short Rib Pechuga was a special release for Dia de los Muertos in 2020. The mezcal is a fusion of culture between Oaxaca and Texas.  its a Fusion of cultures a fusion of Texas and Oaxaca , can’t get more Texas than bbq and more Oaxaca than mezcal. This limited release was made using smoked Wagyu beef short rib in collaboration with Pit Master Ernest Servantes of the Burnt Bean Co. and Maestro Mezcalero Luis Enrique Juarez.

The process begins with fully mature Maguey Espadin from the village of San Agustin Amatengo, Ejutla, Oaxaca. The plants are  cooked in an underground pit, milled using a tahona pulled by two bulls, and fermented in wooden vats. This pechuga was distilled using a copper still with a refrescadera. Only 80 liters of this pechuga were produced.

Pistolero Mezcal

Mezcal Pistolero began releasing mezcals from Oaxaca in mid-2020. Their slogan is “The Only Mezcal with a Bang”.
