Mezcal Pistolero Artesanal Jabali is produced in the region of San Carlos, Yautepec, Oaxaca by Mezcalero Raul Parada. This mezcal is made from 100% wild maguey Jabali. The harvested agave is cooked underground in a pit oven and then milled using a horse-drawn stone tahona. Next, it is fermented in wooden vats with natural spring water. Lastly, it is distilled 5 times in copper pots stills. Maguey Jabali can be difficult to distill and often requires additional rounds of distillation.

Mezcal Pistolero began releasing mezcals from Oaxaca in mid-2020. Their slogan is “The Only Mezcal with a Bang”.
