Santamaria Joven is traditionally produced using Maguey espadin in the community of Palpan, Morelos, Mexico.
About this destilado de agave
Santamaria Joven is unique in the Santamaria lineup in that it is not infused with fruit. This is produced by Maestro Mezcalero Rosendo Santamaria and his wife Sofia, whose family has been producing agave spirits for generations using the same traditional artisan methods. The Maguey espadín is grown to maturity for 10-15 years, harvested to obtain the piña or heart of the agave, and cooked for 3 days in an underground pit oven. The roasting gives it the rich smoky flavor and once unearthed, it’s crushed by horse-drawn tahona, then sent to ferment in copper and stainless steel tanks.
