Villasuso Salmiana is produced in the Valle de San Francisco in the state of Guanajuato. This is produced by maestro mezcalero Manuel Bernardo Villasuso Courtade. The Agave salmiana takes 8 years to reach maturity in this region. The harvested agaves are cooked in steam ovens. This is different from the vast majority of mezcal, which is produced in underground pit ovens, where the agaves are smoked. The steam oven for Villasuso provides a clean mezcal with no smoke.
Villasuso Mezcal
Villasuso Mezcal is the family brand that was started by the late maestro mezcalero Don Manuel Villasuso Ledezma. His son, Manuel Bernardo Villasuso Courtade, began producing with him in 1960, carrying on the family tradition and mezcal recipe. Manuel Bernardo’s son Pedro is now also involved in production.

2 reviewsI love this Mezcal — because it’s delicious, sure, but also because it contradicts what you think you know about Mezcal. There is *zero* smoke used in making this spirit. Even the stills operate with steam. And the agave is cooked with steam, too. And every visit to this beautiful fabrica is wonderful!
