About this mezcal

Desolas Mezcal is an artisanally crafted spirit produced from 100% Agave salmiana found in the state of San Luis Potosi, Mexico. Salmiana has low sugar content and thus a lower yield despite its large size. After being crushed with a stone mill, the piñas are cooked in above ground brick ovens instead of an underground pit, resulting in a mezcal with a low smoke aroma. The mash is fermented in stainless steel in order to make a cleaner product with less bacteria. It is then distilled in a copper still. The production methods gives the final product grassy, earthy and agave forward notes.

Very bright and green aromas: Green peppers, fresh asparagus, jalapeno, under-ripe habanero, and a slight touch of cheddar cheese. The palate is also extremely green, a little watery, but not overwhelmingly so. The palate mostly matches the nose with notes of jalapeno cheddar cheese, green bell peppers, cream of asparagus soup, and chalky minerals. This is really enjoyable but not something I’d reach for regularly. It’s 100% worth a taste. Lote MMDN 004? It could be 001 at the end of lote number, but tough to tell. Bottle 3329.
