About this mezcal

Desolas Mezcal is an artisanally crafted spirit produced from 100% Agave salmiana found in the state of San Luis Potosi, Mexico. Salmiana has low sugar content and thus a lower yield despite its large size. After being crushed with a stone mill, the piñas are cooked in above ground brick ovens instead of an underground pit, resulting in a mezcal with a low smoke aroma. The mash is fermented in stainless steel in order to make a cleaner product with less bacteria. It is then distilled in a copper still. The production methods gives the final product grassy, earthy and agave forward notes.

The most notable part, is that the smoke is less dominant – almost in the background of the actual taste of the agave.
The aroma is inviting, with hints of roasted agave, earth, and subtle smokiness that aren’t overpowering but perfectly balanced. On the palate, Desolas impresses with a smooth, rich flavor profile that brings forward the natural sweetness of the agave, mingling with notes of citrus, fresh herbs.
The complexity of flavors is astonishing yet approachable, making it a great choice for both mezcal aficionados and newcomers.
One of the most striking aspects of Desolas is its smooth finish. Unlike some mezcals that can have a harsh bite, Desolas leaves a lingering warmth that feels clean and satisfying.

DeSolas is a light and fresh tasting, low smoke Mezcal. At first, the nose is bright and herbaceous. The flavor is very smooth, complicated but well balanced.

It’s super easy to drink and enjoyable straight up on the rocks or great in a margarita cocktail – my favorite cocktail is a clean cocktail from a cocktail bar and restaurant in Soho, NY that is a combination of Desolas, cucumber & lime.

This is one of my favourite mezcals. It’s super herbal, not very Smokey at all, but just enough. It feels really smooth and easy to drink both on its own and in a cocktail. Taste is very herbal and green, peppery, and fresh. An approachable and unique mezcal.

Very bright and green aromas: Green peppers, fresh asparagus, jalapeno, under-ripe habanero, and a slight touch of cheddar cheese. The palate is also extremely green, a little watery, but not overwhelmingly so. The palate mostly matches the nose with notes of jalapeno cheddar cheese, green bell peppers, cream of asparagus soup, and chalky minerals. This is really enjoyable but not something I’d reach for regularly. It’s 100% worth a taste. Lote MMDN 004? It could be 001 at the end of lote number, but tough to tell. Bottle 3329.
