El Destilado Pizorra is crafted by maestro mezcalero Delfino Tobón Mejia with wild maguey Pizorra in the town of San Pablo Ameyaltepec, Puebla.

El Destilado Pizorra is crafted by maestro mezcalero Delfino Tobón Mejia with wild maguey Pizorra (Agave marmorata) from the mountains that surround the town of San Pablo Ameyaltepec, Puebla. After cooking and crushed the plants, it is fermented for 12 days in plastic vats. Next, Maestro Delfino uses a single-pass, “reflux” style still that he crafted himself from copper and stainless steel. The first batch under the El Destilado label was 120 liters distilled in January 2019. This spirit has notes of pink peppercorns, peaches, cloves, and black tea.

While some of the El Destilado brand’s agave distillates are sourced from some of the same producers as the 5 Sentidos brand, the El Destilado spirits brand is otherwise not directly related to the El Destilado restaurant in Oaxaca City. The brand was founded by Michael Sager and Marcis Dzelzainis, who own the Sager + Wilde Restaurant and Wine Bar in London.

Really unique experience, it tastes like Del Maguey’s San Pablo Ameyaltepec with a layer of lactic-grassy sourness adding complexity. Smells of plum, light ash and herb. Very creamy mouthfeel, peach and apricot with mint and coconut cream at first, then a slightly tart pineapple flavour with full fat kefir notions — a bit like a very creamy lassi drink made on peach and pineapple instead of the usual mango. Some pine needle saponin aroma too.
If this is indeed the same juice as 5 Sentidos Pizorra (that I have not tasted) I completely agree with Rakhal that it feels like a raicilla meeting Caribbean cane juice rhum.
