About this mezcal

Fidencio Unico is distilled in a custom, wood fired, Alembic still that was custom designed by their mezcalero, Enrique Jiménez. It is distilled twice and then bottled. This Mezcal is slightly sweet with subtle aromas of charcoal, green apple and pear.  The flavor bouquet goes from slightly smoky to these ripe fruit.

Fidencio Mezcal

Fidencio Mezcal has four generations of knowledge and they use their own estate grown agave. Fabrica de Amigo del Mezcal is the name of the distillery/palenque that produces Fidencio Mezcal. Fidencio Jiménez, the namesake for Fidencio Mezcal, started making mezcal over 100 years ago when he moved to Santiago Matatlán, Oaxaca. He began to live the life of a Mezcalero, learning from peers and by trial-and-error. He worked closely with his son Enrique to perfect their craft and to pass down their knowledge to the next generation. In those days, even the equipment was from the land: clay pots for fermentation, distillation & storage and river reeds for tubing.

First off: Good spirit! Nothing wrong with it. Perhaps not complex, but solid. What I like most is that, with this bottle, I have an example of what a mezcal is like without smoke. Since the agave was cooked in an oven without smoke and the heat was provided by cycling hot water or steam through pipes, like a radiant home heater would do (I can’t see any holes or perforations in the picture of the pipes at the maker’s facility), then what we should end up having here is a very, very sterile cooking process that could release the agave notes at their “purest” (or at least, least-adulterated) potential? In other words, we have a mezcal prepared like a tequila. So if we put this side by side with tequilas, perhaps we get a good chance to compare the agaves to each other. The espadin seems to release more sharp bite and complexity than the blue agave. Friends who hate the smokiness of mezcal – slip them one of these and tell them it’s a mezcal but don’t mention the cooking process…. after they whine about the smoke, then let them know: no smoke ever touched it. You have a lesson in agave distillation here. I like it for that.

this is a good bargain.the price is low but it is a good quality mezcal.it has a good full agave flavor but is very light.this is an ideal spirit for the summer.the nose is rich and typical of an espadin.entry is some sweet mixed with black pepper.midway the taste opens to more spice and mild sugar.the finish is quick and clean.the buzz is also clean.i enjoy having a beer to sip in between samples of mezcal or tequila.they seem to compliment each other.this one is very easy to sip on.it is the first fidencio i have tried and found it mild and pleasant.i have seen many good reviews for this brand and i dont think anyone would go wrong in purchasing this one.
