Mezcal IBA 40 is made with farm grown agave Espadin by mezcalero Faustino Ramos in the community of San Pablo Huixtepec, Oaxaca.
About this mezcal
Mezcal IBA 40 is certified organic in both the US and Mexico. It is also certified Kosher by OneKosher. It’s made with agave Espadin and is adjusted after distillation to meet 40% ABV. IBA 40 received the Silver Medal at the San Francisco World Spirits Competition in 2014, and it won Double Gold at the same competition in 2015. The main difference between the IBA 40 and the IBA 55 is the ABV, which of course will impact the flavor, scent, and overall feel of the mezcal.
IBA Mezcal
IBA means “heaven” in a Zapotec dialect. Mezcal IBÁ is manufactured in a community called San Pablo Huixtepec in the state of Oaxaca. Their mezcals are produced with agave that is cooked in stone ovens made of river rocks. Once fermented, it is double-distilled in a copper alembic still.

Overall a mild mezcal that is a bit watery and light. Not a bad intro to mezcal. I have a soft spot for this mezcal as I tried it for the first time in Israel with some new friends. Fun fact: this mezcal is certified kosher.

15 reviewslot 2306-6 almost non existing nose with just a hint of heated candle wax. harsh bite up front with no smokey flavor and very little else that would add flavors. I really wanted to like this (organic, kosher, award winning in a cool bottle with a nice story on it) but I’m left disappointed. I’ll try it again soon and amend my review if deserved.
