About this destilado de agave

Rezpiral Tobala from Luis Antonio Santiago is produced in the community of San Vicente Coatlan, Oaxaca. Luis is a school teacher in addition to being a mezcalero campesino. He also runs an agave nursery where he grows a range of agaves from seed.

Rezpiral

Rezpiral brings selections of high-quality traditional small-batch (non-certified) Mezcals into a handful of places in the USA. At the core of the project is the embrace of an ethos that aims to respect and support the multi-generational knowledge, independence, flavors, lands, and ways of each mezcalero family.

Rezpiral’s small scale allows for the advocacy of diversity on different levels, from supporting the autonomy of producers & their continued production of artisanal mezcals to the preservation of local land control. Rezpiral actively supports master artisan’s proactive planting and management of agave; recollecting and incubating seeds, transplanting and farming diverse species of endemic agave in sustainable ways. Rezpiral directs 10% of earnings back into supporting artisans farming.

Rezpiral has a regional greenhouse to support independent small scale mezcaleros in cultivating and reforesting their lands with local endangered wild agave varietals. They also are highly focused on a cultural and conservation residency program.

ABV 46.5%

Nose: Guava cream cheese, up close it’s more ash and pencil eraser but as you move your nose further away it’s dried fruit like pineapple, mango, slightly lactic and cheesy. Some lime as it sits. I’m intrigued by the nose

Palate: oh wow, this is cool. Nose translates well to the palate, cheesy fruit, oranges and guava, but briefly then its cherry licorice. Some lemon, slight leathery moving into the finish it drys quickly with some stone and minerality. I really enjoy the finish. Some ash, charred fruits, slate. Just sits nicely for a while.

Agree with Imperium this is some high quality agave juice! It’s fruity but not assaultingly so and damn do I love fruit and minerality combined, this does it so damn well

Series 7 in 2023

Nose: fruity, bright and citrusy. Pineapple and lemon. Spicy cheese funk.

Palate: candied fruit, dried papaya flavors. Quickly morphs into cherries. Seriously… Massive amounts of cherry pie. Like a cherry pie just hit me in the face. This is almost too much like candy. Dangerously delicious!
