Sin Gusano Chino (agave Cupreata) has notes of cheese and lactic tones, followed by lots of sweetness and a long finish.

Sin Gusano Chino is produced by maestro mezcalero Jose Ines. He ferments his agave in shallow concrete vats and double distilled in a Filipino still that has a copper boiling chamber and a slatted wooden condenser chamber. Jose only produces one per year, waiting for the hottest possible time to produce this maguey Chino (agave Cupreata).
Sin Gusano Project
The Sin Gusano Project aims to inspire consumers to ethically explore the wonders of handmade agave spirits, which are traditionally known as Mezcal. The brand operates bars and events, and travels regularly through Mexico to source an evolving range of rare distillates. Many of these artisanal spirits haven’t been experienced outside of the communities in which they are made until now.
Sin Gusano launched the Mezcal Appreciation Society (M.A.S.) in spring 2020. M.A.S. is the UK’s only agave spirits subscription club, providing members with regular shipments of agave spirits and educational materials. Membership to the Mezcal Appreciation Society can be purchased here.

On the nose, the sweetness hit me first – like actual sweets – cherry and strawberry – really nice, but then after it opens up I get all kinds of cheese – blue cheese, parmesan, camembert. Mad but it works. The flavours continue on the palate with some earthiness kicking in. Every time I go back it seems to evolve. So smooth. I’m a big fan of this one.
Thanks to the Sin Gusano project I was also able to try the Puntas of this batch. Clearly not to be taken lightly, but the flavours are the same but intensified. A real experience.
